Your Mid-Week Meal Quick Fix

My kids love chicken nuggets. And as much as I love our favorite drive-through chicken, I don’t love all the fried food. These Ritzy Chicken Nuggets get their crunch not from frying, but from buttery, delicious Ritz crackers. And they’re so quick and easy. Just three ingredients! In about 30 minutes, dinner is on the table. Woohoo! Pair with some steamed broccoli and boxed macaroni and cheese (no shame in that dinner hack game!) and call it a dinner winner. Everyone is fed and happy! What more can you ask for?

How to Make Ritzy Chicken Nuggets

In a large bowl, toss the chicken in the ranch dressing and let set for 5 minutes. Meanwhile, crush the Ritz crackers in a large resealable plastic or silicone bag.

Using a fork, lift each piece of chicken and let excess dressing drip off each piece before placing into the bag of crushed crackers. Seal and toss the chicken in the crushed Ritz crackers until each piece is completely coated.

Place nuggets evenly across the prepared baking rack. Bake for 15-20 minutes or until chicken is cooked through and Ritz cracker crumbs start to toast and turn golden brown.

Ingredients

  • 1.5 pounds boneless skinless chicken tenders, cut into bite-size pieces
  • 1/2 cup ranch dressing
  • 30 Ritz crackers

Instructions

  1. Preheat oven to 400°F. Line a rimmed baking sheet with parchment paper or foil and set a baking rack in it. Spray the baking rack generously with non-stick cooking spray and set aside.
  2. In a large bowl, toss the chicken in the ranch dressing. Let set for 5 minutes.
  3. Meanwhile, crush the Ritz crackers in a large resealable plastic bag.
  4. Use a fork to lift and let excess dressing drip off each piece of chicken and then place them into the bag of crushed crackers. Seal and toss chicken in the crushed Ritz crackers until each piece is completely coated.
