Nothing pairs quite as well with a hearty pasta dish as a great side salad. And this Chopped Caesar Salad is just that. Great. With a bright, flavorful dressing, crunchy croutons and salty fresh parmesan, it’s a simple salad that’s simply perfect.

There’s Something Fishy Going On Here…

Or, rather NOT fishy. I know that traditional Caesar dressing calls for anchovy paste. But I also know plenty of folks who won’t go for it. This dressing has wonderful flavor, with the depth and saltiness from anchovies replaced by Worcestershire sauce. It’s delicious!

What Do I Need to Make Chopped Caesar Salad with Homemade Croutons?

  • Romaine lettuce
  • Mayonnaise
  • Extra-virgin olive oil
  • Fresh lemon juice
  • Parmesan cheese
  • Garlic
  • Garlic powder
  • Dijon mustard
  • Worcestershire sauce
  • Kosher salt
  • Freshly ground black pepper
  • Crusty baguette
  • Garlic powder
  • Baking sheet
  • Large mixing bowl
  • Large serving bowl

Make the Caesar Salad Dressing

  • In a small mixing bowl, whisk together all the dressing ingredients until well combined. Store in the refrigerator until ready to serve.
  • Shake or whisk to combine well before using.

Make the Homemade Croutons

  • Preheat the oven to 375°F. In a large bowl, toss the cubed bread with olive oil until coated evenly. Sprinkle in the garlic powder, salt and pepper. Gently toss until well combined.
  • Spread the seasoned bread cubes into a single layer on a large baking sheet.
  • Bake until golden and crispy, gently flipping the croutons halfway through, about 15 minutes total.
  • Let cool completely and use immediately or store in an airtight container at room temperature for up to 1 week.

Ingredients

For the Caesar Dressing (makes 3/4 cup):

  • 1/2 cup mayonnaise
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons grated Parmesan cheese
  • 1 small clove garlic, minced
  • 2 tablespoons Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

For the Croutons:

  • 1 crusty baguette, cut into ¾ inch cubes (about 4 cups)
  • ¼ cup olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper

For the Salad:

  • 1 large (or 2 small) head of romaine lettuce, chopped (about 810 cups)
  • 3/4 cup Caesar salad dressing
  • 1/2 cup shaved Parmesan cheese
