Description

Crisp romaine, salty parmesan and a flavorful dressing tossed with crunchy homemade croutons. This Chopped Caesar Salad is an easy, straight-forward recipe that is sure to become your go-to salad.

Ingredients

For the Caesar Dressing (makes 3/4 cup):

  • 1/2 cup mayonnaise
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons grated Parmesan cheese
  • 1 small clove garlic, minced
  • 2 tablespoons Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

For the Croutons:

  • 1 crusty baguette, cut into ¾ inch cubes (about 4 cups)
  • ¼ cup olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper

For the Salad:

  • 1 large (or 2 small) head of romaine lettuce, chopped (about 810 cups)
  • 3/4 cup Caesar salad dressing
  • 1/2 cup shaved Parmesan cheese
  • 1 cup Homemade Croutons

Instructions

  1. Dressing: In a small mixing bowl, whisk together all the dressing ingredients until well combined. Store in the refrigerator until ready to serve. Shake or whisk to combine well before using.
  2. Croutons: Preheat the oven to 375°F. In a large bowl, toss the cubed bread with olive oil until coated evenly. Sprinkle in the garlic powder, salt and pepper. Gently toss until well combined. Spread the seasoned bread cubes into a single layer on a large baking sheet. Bake until golden and crispy, gently flipping the croutons halfway through, about 15 minutes total. Let cool completely and use immediately or store in an airtight container at room temperature for up to 1 week.
  3. Salad: Put the chopped romaine lettuce in a large serving bowl. Add the Caesar dressing and toss until evenly coated. Add the shaved Parmesan and croutons. Gently toss to combine.
  4. Serve as a side salad or with a protein like grilled chicken or salmon for a meal.
