No Soggy Bottoms!

I’m convinced that baked is best when it comes to tacos! In case you’re worried about soggy bottoms, baking them actually makes them even crispier. The shell touching the hot pan crisps them up nicely. They hold their crisp if you follow the instructions for the filling. Do not add water with the taco seasoning, and the filling will be thick and your tacos will stay crispy!

This recipe is a fresh take on one of my favorite dinner recipes. Turkey and Black Bean Baked Tacos feed a crowd and taste amazing. Baked tacos filled with ground turkey, black beans and lots of melted cheese. Easy to make, simple to serve and awesome to eat!

One of my go-to meals to take to families with new babies are baked tacos. Everyone loves them and always ask how they’re made. I take a big pan of these baked tacos along with some guacamole, pico de gallo, lettuce, black beans & rice and chips. What a meal!

The combination of chili powder, garlic powder, cumin, paprika and kosher salt makes the very best flavor for taco meat. And it’s honestly about as easy as using a seasoning packet! Just remember to leave out the water if you’re making baked tacos!

How to Make Beef and Bean Baked Tacos

  • Preheat oven to 400°F. Spray a 9×13-inch rimmed baking pan with non-stick cooking spray and set aside.
  • In a large skillet over medium-high heat, add a few teaspoons of cooking oil to the skillet. Tilt the skillet to coat the bottom evenly. Add the ground beef and break up the meat as it cooks. Cook until the meat is browned all the way through, 4-5 minutes.
  • Add the taco seasoning mix and stir until beef is completely coated in the seasoning.
  • Stir refried beans into beef mixture until well combined. Remove from heat.
  • Spoon about 1/3 cup of the beef and bean mixture into each taco shell and place in the prepared baking dish.

  • Top the mixture in each taco shell with 2-3 tablespoons shredded cheese.

  • Place tacos in the middle rack of the oven. Bake for 10-15 minutes or until cheese is melted and just starting to brown in spots.
  • Serve tacos with shredded lettuce, pico de gallo, salsas, guacamole, jalapenos or any of your favorite taco toppings for each person to top their own tacos.

How to Prepare Baked Tacos in Advance and Reheat Leftovers

You can prepare the tacos in advance, up to the point of baking them, and then cover the baking dish with foil and place in the refrigerator for up to 2 days. When you’re ready to bake them, take them straight from the refrigerator to the preheated oven and proceed with the baking instructions in the recipe.

When I’m taking these to friends, I will prepare them in a disposable baking pan and then cover the pan with foil and write the baking instructions on the top of the foil so they can reheat them at their convenience. I also write on the foil to keep refrigerated until ready to bake.

To reheat leftover baked tacos, place them in an oven-safe baking dish or on a sheet pan and bake in a 350°F oven until crisp again and heated through. Baked tacos keep great in the refrigerator for up to 3 days.

  • 2 teaspoon canola oil
  • 1 pound ground beef
  • 1 (1 ounce) package taco seasoning
  • 1 (16 ounce) can refried beans
  • 10 stand & stuff taco shells
  • 11/2 cups shredded Mexican blend cheese

Toppings:

  • shredded lettuce
  • pico de gallo
  • salsas
  • guacamole
  • jalapenos

Instructions

  1. Preheat oven to 400°F. Spray a 9×13-inch rimmed baking dish/pan with non-stick cooking spray and set aside.
