Everyone needs a good, quick, easy, irresistible fudge brownie recipe. So if you don’t have one that you bake all the time and that completely knocks your socks off, then you have got to bake these One Bowl Fudge Brownies.
Trust me, they are much better than any brownie mix you will ever try. They are so easy and can be mixed up in just one bowl.

Incredibly Delicious Brownies
In fact, Baker and I were just hanging out on Monday morning and decided we would bake up a batch to enjoy the rest of the week. It took no time to get these in the oven and within the hour we had warm, gooey, fudgy brownies in our mouths. They are incredibly delicious!
Good luck letting them cool. If you’re like us, you’ll dig right in, but I recommend waiting at least 10 minutes so they’re easier to slice and serve. It’s hard to beat a warm fudgy brownie right out of the oven though!

You just mix all the ingredients in one bowl. Spread the batter evenly into the prepared baking dish. Bake for about 30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. And you’ve got fudgy brownies ready to enjoy.

What Do I Need to Make One Bowl Fudge Brownies?
Ingredients:
- Unsalted butter: provides richness, moisture, and helps with the fudgy texture. Melting it with chocolate also creates a smooth base. You can substitute with a salted butter, but you would need to adjust the added salt unless you want them extra salty.
- Semi-sweet chocolate chips: they give deep chocolate flavor and contribute to that fudgy chew. You can substitute with milk chocolate chips or dark chocolate chips, if desired.
- Granulated sugar: sweetens the brownies, but also helps create that crackly top by bonding with the eggs. You can substitute with brown sugar which will make them even moister and a little chewier.
- Eggs: bind everything together and add structure while also keeping them rich. They’re key to the shiny top when beaten with the sugar.
- Vanilla extract: enhances the chocolate flavor and gives warmth.
- All-purpose flour: provides structure and keeps the brownies from being too gooey.
- Kosher salt: balances the sweetness and sharpens the overall chocolate flavor. If you substitute with table salt, use slightly less since it’s finer. A little flaky sea salt sprinkled on top before or after baking would give you a fancier finish.
- Baking powder: gives a little lift so the brownies aren’t too heavy.
- Unsweetened cocoa powder: boosts chocolate intensity without extra sweetness. It also balances the melted chocolate.

How to Make One Bowl Fudge Brownies
- Preheat oven to 350°F. Lightly grease a 9×13-inch baking dish with non-stick cooking spray and set aside.
- Place the butter and chocolate chips in a large microwave safe bowl.
- Heat in the microwave for about 2 minutes, stirring every 30 seconds, until the chocolate chips are melted and smooth. Remove from microwave.
- Stir in the sugar then add the eggs one at a time and stir until smooth. Stir in the vanilla.

- Add the flour, salt, baking powder and cocoa powder and stir until well incorporated.
- Spread the batter evenly into the prepared baking dish.
- Bake for about 30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Try not to overbake! Pulling the brownies out when a toothpick has moist crumbs is the secret to fudgy brownies instead of cakey ones.
- Let set for at least 10 minutes before slicing and enjoying!

How to Store One Bowl Fudge Brownies
Store leftover brownies in an airtight container on the counter for up to 4 days or in the refrigerator for up to a week. If stored in the refrigerator, I’d suggest letting them come to room temperature before serving. Leftover brownies can also be heated in the microwave for 5-10 seconds to warm them up before enjoying again.
To freeze, I recommend wrapping them individually in plastic wrap. Then place in a freezer-safe container or in individual freezer-safe baggies to store in the freezer for up to 3 months.
To defrost frozen brownies, let them set at room temperature for 1-2 hours, loosely covered, so they don’t absorb too much of the moisture.

Tip for Perfect Fudgy Brownies: For that rich, fudgy texture, remove the brownies when a toothpick inserted in the center comes out with a few moist crumbs. They’ll finish setting as they cool. If the toothpick comes out completely clean, they’ll end up more cake-like. If it’s still coated with wet batter, bake a little longer and test again until you see just a few moist crumbs.

How do you make these in a sheetpan like you are showing on your video?
Hi Patty! I doubled the batter and spread it in a greased 18×13-inch sheet pan for about 20 minutes or until a toothpick inserted throughout comes out clean with crumbs. They were a huge it!
Is it possible to make these brownies with half the sugar? What extra ingredient would you add to take the place of the 1 cup of sugar being omitted? I am experimenting with using half the sugar in every recipe I make.
Hi Marg! I haven’t tested the recipe with anything but the 2 cups sugar so I couldn’t say for sure how it would turn out with half the sugar. It’s certainly worth a try though. I made these with raw sugar, made sure to beat the eggs in a little bit extra and I added some broken up salted pecans on top. These beautiful browniesare super sweet, so the salt from the pecans cuts the sweet just the right amount!
