What’s Better than a Giant Cookie?

When is a cookie even better than cookie? When it’s a cookie cake! Y’all know by now how my heart beats for a great chocolate chip cookie. And this? This is a giant chocolate chip cookie. I love the texture, the little pockets of melting chocolate and the perfect feeling of that first bite. In our family, we celebrate every birthday first thing in the morning with a Birthday Donut Cake. But birthday festivities go on for a whole day (or even longer!), and I sometimes bake up a chocolate chip cookie birthday cake to keep things sweet. And there’s no question why it’s a family favorite!

Perfectly chewy, satisfyingly dense, and filled with melting chocolate chips, this cookie cake requires only simple ingredients and easy-to-follow instructions. Eggs, butter, vanilla extract, and pantry staples like brown sugar, granulated sugar, baking soda, salt and flour (and of course, chocolate chips!)–you probably have everything you need to make this delicious treat. So, let’s get baking!

How to Make Chocolate Chip Cookie Cake

First, preheat oven to 350°F and spray a 10” to 12” round rimmed cookie or cake pan with nonstick cooking spray. Then, in the bowl of an electric mixer, beat the butter and sugars until smooth. Beat in the vanilla and eggs until well combined.

Next, add the flour, baking soda and salt. Mix until just combined. Stir in 1 cup chocolate chips.

Press the cookie dough into an even layer in the prepared pan. Press about 2 tablespoons of chocolate chips evenly across the top of the dough in the pan. Bake for 20-25 minutes or until the cake is lightly golden brown on top and just set in the middle.

Remove from the oven and set the pan on a wire rack to cool completely. Once cooled, serve out of the cookie cake pan or use a sharp knife and spatula to loosen the sides of the cookie cake from the pan and transfer to a serving dish.

Using a piping bag, decorate around the edges of the cookie cake with the chocolate frosting. Serve all by itself or with ice cream for full birthday effect! Enjoy!

  • 1 cup chocolate chips (+ 2 tablespoons for garnishing)
  • Chocolate frosting, for decorating

Instructions

  4. Press the cookie dough evenly into the prepared pan. Press about 2 tablespoons of chocolate chips evenly across the top of the dough in the pan.
  5. Bake for 20-25 minutes or until the cake is lightly golden brown on top and just set in the middle.
