A Summer Salad that Satisfies!
On a hot summer day, I’m happy to sit down to a delicious salad for lunch or dinner. But it has to be really satisfying or I’ll end up hungry and browsing the fridge again. This BLT Chopped Salad is not only fresh and satisfying, it’s just a treat for the tastebuds. Crisp bacon, creamy avocado, tangy blue cheese, crunchy croutons and a homemade ranch dressing that’s out of this world. You’ll see. It’s so, so good.
There are, of course, ways to make this salad simpler. You can buy prepared bacon crumbles in the refrigerated section of the grocery store. You can always use a bottled ranch dressing and store-bought croutons. But. I promise you that every effort made for this salad is worth it. The flavors complement each other so well, your taste buds will thank you. And you’ll want to make this salad again and again.
How to Make a BLT Chopped Salad
First, if not using store-bought bacon crumbles, bake the bacon and let cool. Once cool, chop into small pieces or crumble with your hands. Next, make the homemade croutons and let cool. Then grill the corn. Next, prepare the homemade ranch dressing and set aside in the refrigerator.
Prep your vegetables by halving the cherry tomatoes and dicing the avocado. Then combine the lettuce, tomatoes, bacon, avocado and corn in a large bowl. Toss with ½ cup ranch dressing. Add blue cheese crumbles and croutons. Toss to distribute throughout the salad.
Serve immediately and enjoy!
