Breakfast Sausages with a Twist

No brunch would be complete with out these Bacon-Wrapped Sausages in a Maple Glaze! They’re so easy to make a great to serve a hungry crowd. Whether it’s a holiday breakfast, brunch with friends, or a lazy Sunday morning in the kitchen, they always get such rave reviews.

A Brunch Must Have

I served these for a pumpkin palooza brunch I hosted recently and they were the perfect accompaniment. Why choose between bacon and sausage when you could have them both in one? The salty meats with the sweet maple glaze is heavenly.  

They’re crispy bacon-wrapped sausage perfection. They’re perfect to serve with something sweet like a Blueberry French Toast Casserole, or a traditional breakfast of sunny-side-up eggs or scrambled eggs, crispy waffles or buttermilk pancakes. You can’t go wrong!

Ingredients and Supplies

Ingredients:

  • Thick-cut bacon (long slices, cut in half): brings that savory, smoky, crispy layer that everyone loves. Thick-cut holds up well during baking and gives a satisfying bite. It’s the wrapping that transforms a simple sausage into something party-worthy. It also absorbs and holds onto the maple glaze, giving you those sticky, caramelized edges that taste like magic.
  • Small breakfast sausages: the mild, slightly peppery flavor of breakfast sausages pairs so well with sweet glazes — it’s the classic “sweet and savory” combo that feels nostalgic and comforting.
  • Pure maple syrup: seeps into the bacon and sausage as they cook, creating that irresistible sticky glaze. Using pure maple syrup instead of pancake syrup is key — it caramelizes beautifully and adds real depth with a rich sweetness.
  • Light brown sugar: gives the glaze a thicker texture and an extra layer of sweetness. Brown sugar has molasses in it, which adds a hint of warmth and smokiness — perfect alongside bacon. It also helps the glaze cling better and crisp up the bacon in the oven.

How to Make Bacon-Wrapped Sausages

  1. Preheat oven to 400°F. Spray a large rimmed baking sheet with non-stick cooking spray.
  2. Wrap a half of a slice of bacon around each sausage and secure with a toothpick. Place on prepared baking sheet.
  3. In a small bowl, whisk together the maple syrup and brown sugar.
  4. Brush half of the glaze evenly over the bacon-wrapped sausages, coating the tops and sides of each one.

  • Place the baking sheet on the top rack of the oven and bake for 15 minutes. Remove bacon-wrapped sausages from the oven and brush evenly with remaining glaze.
  • Return to oven and bake for another 15-20 minutes or until bacon is browned and crisp.

Storage and Reheating

To store, place cooled sausages in an airtight container. I usually line the bottom with a paper towel to soak up any extra grease so they don’t get soggy. They’ll keep well for 3–4 days.

Reheat in a 350°F oven until hot and the bacon is crispy.
