A New Classic

There’s certainly nothing new about a Cobb salad. it’s a classic for a reason. Mixed greens, crispy salty bacon, hard boiled egg, grilled chicken, fresh tomato, avocado and onion all drizzled with blue cheese dressing (or ranch!). But layering all that greatness on top of a baked sweet potato makes for an extra special meal that will fill you up yet leave you wanting more.

Your Summer Craving

We’re trying to soak in summer, and with everything going on, we’ve been eating out or ordering in A LOT! I sure appreciate a break from cooking and doing dishes every once in a while, but I really love cooking and eating at home. It just feels good to prepare something yummy we can all enjoy together.

These cobb salad sweet potatoes have been a family favorite over the past few months and we’ve all been craving them lately. They’re kind of like a cross between my favorite Cobb salad recipe and my Greek Loaded Sweet Potatoes. So yummy, so easy to prepare and when served so that each person can build their own, everyone’s happy!

Whenever I make these, I always prep extras of everything so I can make one for lunch the next day or easily serve them again for dinner the next night. The kids LOVE building their own and it’s so neat to see them take pride in the sweet potato they create and then quickly devour.

Ingredients

  • Baked sweet potatoes: serve as the hearty, naturally sweet base that makes this Cobb salad filling enough for a complete meal.
  • Mixed greens: add freshness, color, and a crisp contrast to the warm sweet potatoes. Chopped romaine, spinach, arugula, or your favorite salad greens can be substituted for the mixed greens.
  • Cooked chicken: adds lean protein to make the meal satisfying. Rotisserie chicken (a huge time saver!), steak, or grilled shrimp can be substituted for the chicken breasts. Pan seared chicken tenderloins work great, too.
  • Cooked bacon: brings smoky, salty crunch that complements the sweet potatoes so well. Fry your bacon or try baked bacon. It’s less messy!
  • Cherry tomatoes: add juicy freshness and a pop of acidity to balance the richer toppings.
  • Diced ripe avocado: adds creamy texture and healthy fats that make every bite more satisfying. Learn how to choose a ripe avocado.
  • Hard-boiled eggs: add classic Cobb flavor plus extra protein and richness.
  • Red onion: adds crisp texture and a sharp bite that brightens the salad. 
  • Crumbled blue cheese: provides the bold, tangy flavor that’s traditional in a Cobb salad. 
  • Blue cheese or Ranch dressing: ties all the ingredients together with creamy flavor. use your favorite store-bought brand or try my super flavorful Homemade Ranch Dressing.

How to Make Cobb Salad Sweet Potatoes

  • Split the baked sweet potatoes in half.
  • Fluff up the sweet potato flesh with a fork.
  • Top each sweet potato with 3/4 cup mixed greens.
  • Pile with diced chicken.

  • Add crumbled bacon, halved tomatoes, chopped avocado, chopped egg, chopped onion and crumbled blue cheese evenly among the mixed green topped sweet potatoes.

  • Drizzle each one with 2 tablespoons blue cheese or ranch dressing.

Storage

Store leftovers in an airtight container in the refrigerator for up to three days.

When reheating, warm gently in the microwave or oven without the dressing, if possible. Expect it to be softer the next day, but still good, just less “fresh” feeling.

Ingredients

  • 4 baked sweet potatoes
  • 3 cups mixed greens
  • 2 large boneless skinless chicken breasts, cooked and diced (about 2 cups)
  • 4 strips bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1 large ripe avocado, peeled and chopped
  • 3 hard-cooked eggs, chopped
  • 1/2 medium red onion, peeled and chopped
  • 1/2 cup crumbled blue cheese
  • 1/2 cup blue cheese or ranch dressing (we love Bolthouse yogurt dressings)


Instructions

  1. Split the baked sweet potatoes in half and fluff the flesh with a fork.
  2. Top each sweet potato with 3/4 cup mixed greens.
  3. Divide the remaining toppings evenly among the sweet potatoes, then drizzle each with 2 tablespoons of blue cheese or ranch dressing. Serve immediately.
