Hot Weather Calls for Ice Cream Pie

Have you thought about licking the screen yet? Look, I wouldn’t blame you. Y’all already know my feelings on chocolate and peanut butter. The flavor combination that was simply meant to be. And when it all comes together in a perfectly chilly ice cream pie, whew! Save me from myself, friends! And when it’s hot out like this, I don’t need a special occasion to pull together an scrumptious Chocolate Peanut Butter Ice Cream pie for my family. The heat is the occasion! That first bite? Well, I can’t wait for y’all to fall head-over-heels just like we did.

Ice Cream Pie MAGIC

I have to warn you. This pie may be so easy to make, but waiting to eat it is not. The magic of this ice cream pie is how easily it comes together, but waiting for it to freeze is straight up torture. They say a watched pot never boils. The same is certainly true of a freezer that gets checked over and over.

When crunchy Oreo cookies, creamy peanut butter, decadent cream cheese and cold, refreshing ice cream all come together in a single dessert, the wait seems endless. But close that freezer door, y’all, and be patient because this pie is so worth the wait.

Ingredients and Supplies

Ingredients:

  • Oreo cookies
  • Unsalted butter, melted
  • Cream cheese, softened
  • Powdered sugar
  • Creamy peanut butter
  • Vanilla ice cream

Supplies:

  • Food processor or blender
  • Mixing bowl
  • Stand mixer fitted with paddle attachment (or hand mixer)

How to Make Chocolate Peanut Butter Ice Cream Pie

To Make the Crust:

  • First, crush the Oreo cookies into fine crumbs in a food processor or blender.
  • Then transfer to a mixing bowl and combine well with the melted butter.

  • Once it’s mixed well, press the mixture into the bottom and up the sides of a 9″ pie pan.
  • Chill the crust in the freezer while making the filling.

To Make the Filling:

  • Next, in the bowl of a stand mixer fitted with the paddle attachment, beat together the cream cheese and powdered sugar until light and fluffy.
  • Add the peanut butter and continue beating until smooth. Then add in the ice cream on low speed, and beat until creamy.
  • Spread the filling into the prepared crust.

  • Garnish with more Oreo cookies (whole and/or crushed). 
  • Cover with plastic wrap and freeze for several hours or overnight.
  • Let the frozen pie stand at room temperature for about 5 minutes before slicing into. Serve and enjoy!

Storage

Store tightly covered in the freezer.

  • 24 Oreo cookies, plus more for garnishing
  • 1/4 cup unsalted butter, melted

Filling:

  • 1 (8 ounce) package cream cheese, softened
  • 3/4 cup powdered sugar
  • ⅔ cup creamy peanut butter
  • 2 cups well-packed vanilla ice cream


Instructions

Crust:

  1. Crush the Oreo cookies into fine crumbs in a food processor or blender. Transfer to a mixing bowl and combine well with the melted butter.
  2. Press the mixture into the bottom and up the sides of a 9″ pie pan.
  3. Chill the crust in the freezer while making the filling.

  1. I made this pie for my Oreo and peanut butter loving son. I added a heaping tsp. vanilla to the filling, and had a couple peanut butter cookies on hand, so crushed those up and added to the top along with some crushed Oreos. And had a bit of hot fudge on hand too, so drizzled that over the top. It looked great, and tasted even better. A wonderful recipe!
