Oh, how I love watermelon season! There’s just something so spectacular about cutting into a cold watermelon on a hot summer day and taking that first sweet, juicy bite. The taste is so refreshing and satisfying!
I buy a big watermelon almost every time I’m at the farmer’s market or grocery store throughout the summer because I know that if I cut it, we will eat it. I mostly cut it into cubes and keep it in a sealed container in the fridge so it’s ready to go at a cravings notice. We love having watermelon as a side with our meals, especially when we grill or smoke meats. It compliments the salty heat of the meat so well. Sometimes we’ll serve it as is, but I sure love kicking it up a knotch by making this watermelon feta salad with fresh mint and a balsamic glaze.
The salty, creaminess of quality feta combined with the sweet crunch of a perfect summer watermelon along with fresh mint and the tang of the balsamic glaze is just so fabulous and refreshing. It’s the perfect side dish to take to a summer potluck.

How to Make Watermelon Feta Salad
First, you cut the melon into cubes and place it in a large bowl for serving. Then crumble the feta over the watermelon. I recommend a block of sheep’s milk feta. It’s the best!
Next comes a generous drizzle of balsamic glaze. You can find a bottle of balsamic glaze near the balsamic vinegar or in the produce section at the grocery store or you can make your own.
Finish the salad off with a sprinkling of chopped fresh mint leaves and flakes of sea salt.

Ingredients
- 6 cups cubed seedless watermelon
- 1/2 cup crumbled feta cheese (I recommend sheep’s milk feta)
- 3 tablespoons balsamic glaze
- 2 tablespoons chopped fresh mint
- 1/2 teaspoon flaked sea salt
Instructions
- Place cubed watermelon in a large serving bowl. Arrange crumbles of feta over the watermelon. Drizzle the watermelon and feta with the balsamic glaze. Sprinkle with chopped fresh mint and flaked sea salt.

Can crumbled Feta be replaced with Feta PEARLS?
Hi Maureen! I’ve never seen Feta pearls. Where do you find them? I’ve only seen mozzarella pearls and cubed Feta. Either one would work great in this recipe. Enjoy!
I’m making this a day ahead of time, should i put the watermelon and mint in a bowel and just add the feta, balsamic, and salt before serving?
