There is so much yumminess on this breakfast board that I don’t even know where to start. Everyone can top their own pumpkin waffles with a beautiful selection of toppings like honey cinnamon butter, sautéed apples, cinnamon sugar pecans, pumpkin seed and pecan granola clusters, pomegranate seeds, chocolate chips, honey and maple syrup. With some baked bacon, mandarin oranges and fresh apple slices on the side, it’s a breakfast spread that’s sure to excite and satisfy everyone!

Start by making the baked bacon, pumpkin waffles and sautéed apple topping. See below for my Pumpkin Waffle recipe and how to make the sautéed apple topping.

Once the pumpkin waffles and bacon are ready, keep them warming in a 200°F oven while the sautéed apple topping stays warming on the stove.

To build the board, I used my favorite 20″ round walnut wood board.

To assemble the board, arrange small bowls of cinnamon sugar pecans, pumpkin seed & pecan granola clusters, honey cinnamon butter, pomegranate seeds, semi-sweet chocolate chips and white chocolate chips on the board. Add small jars of honey and maple syrup to the board.

You can make your own honey cinnamon butter or Kroger has a delicious Butter with Honey & Cinnamon that I used on this board. It’s so creamy and perfectly flavored. Perfect for spreading on waffles, toast, muffins, and even sautéing apples with. 

Once the toppings are arranged on the board, add the Honeycrisp and Granny Smith apple slices, half of a pomegranate with seeds, mandarin orange slices and little pumpkin mandarin oranges, which are made by peeling a mandarin orange and adding a sliver of a green apple to the top for the stem.

Finally, line the pumpkin waffles down the middle of the board. Stack the bacon on the left side of the board and put the sautéed apple topping in a mini skillet or serving bowl on the right side of the board.

Description

Crispy pumpkin spice waffles are perfect for a fall breakfast treat!


Ingredients

  • 2 cups all-purpose flour
  • 1/3 cup brown sugar
  • 2 teaspoons pumpkin pie spice
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • 2 large eggs, lightly beaten
  • 2 cups whole milk
  • 1 (15 ounce) can 100% Pure Pumpkin
  • ¼ cup honey & cinnamon butter, melted

Instructions

  1. Preheat a waffle iron according to manufacturer’s directions.
  2. In a large mixing bowl, whisk together the flour, brown sugar, pumpkin pie spice, baking powder, baking soda and kosher salt. Add the lightly beaten egg and milk and whisk until batter is smooth. Stir in the pumpkin and melted butter.
  3. Spray the waffle iron with non-stick cooking spray and add ½-cup waffle batter to each waffle side. Close the waffle iron lid and let bake for about 2-3 minutes on each side or until golden brown and crisp on the outside.
  4. Remove to a baking sheet that’s been sprayed with non-stick cooking spray. Place cooked waffles in a 200°F warm oven to keep them warm while you cook the remaining waffle batter. Repeat process with the remaining batter to make 12 large waffles.
  5. Serve with honey cinnamon butter and pure maple syrup.

Sautéed Apple Topping

Description

Fall’s favorite fruit sautéed in honey cinnamon butter for a deliciously perfect topping to waffles, pancakes or even ice cream!


Ingredients

  • 2 cups chopped apple (I used Honeycrisp and Granny Smith)
  • 1 tablespoon water
  • 2 tablespoons honey cinnamon butter

Instructions

  1. Add the chopped apples and 1 tablespoon water to a small skillet over medium heat. Cover and let the apples cook, stirring occasionally, until they’re just starting to soften and the water is absorbed, about 3-5 minutes.
  2. Add the honey cinnamon butter to the skillet. Stir the apples and butter together until the apples are completely coated. Continue to sauté over low heat for an additional 5 minutes until the apples are of your desired softness.
