Corny Summer Side Dishes
It’s summer! So, don’t mind me, but I’ll just be over here adding watermelon to every thing I make. Ooh, or grilled corn! Grilled corn is sweet and juicy and it’s just so easy I can find literally any excuse to make it. Grilled corn salsa? Don’t mind if I do! And my newest, Pesto Parmesan Grilled Corn knocks it right out of the park. Sweet corn. Nutty pesto. Salty parmesan. It’s literally a combination of all the best flavors there are. And it’s so crazy easy to make. I’d say come prepared with plenty of napkins, but experience tells me, this one is finger-licking delicious.
How to Make Pesto Parmesan Grilled Corn
This crave-able corn could not be any easier. To make things easy and breezy, I used store-bought pesto and pre-grated parmesan. But feel free to make your own, if you’re feeling so inclined!
First, peel off the corn husks and remove the silks. After shucking, rinse under some cool water to make sure all the silks are off. Chop up some fresh basil.

Brush each ear of corn with one tablespoon pesto, sprinkle with one teaspoon of grated parmesan and then sprinkle with a pinch of chopped fresh basil.

- 4 ears of corn
- Olive Oil
- 1/4 cup prepared pesto
- 4 teaspoons grated parmesan
- 2 teaspoons chopped fresh basil
- Prepare and grill the corn (See my Basics by The BakerMama: How to Grill Corn)
