Summer is here, y’all! Which means tons of fresh, tasty produce to craft new recipes! Hooray! And this Grilled Corn Salad with Strawberries, Feta & Mint is quickly become one of my new go-to dishes. Something about the combination of sweet berries, salty feta, and juicy corn is pure magic. Add a touch of fresh mint and you have a family favorite summer side dish. It’s an instant hit! Pro tip: make more than you think you’ll need. Because forget seconds. Everyone will be back again and again until they’re scraping the bowl!

Besides being delicious, the beauty of this delicious salad is how simple it is to pull together! Go from grill to table (and a happy crowd!) in about 20 minutes. Pretty hard to beat that!

How to Make Grilled Corn Salad with Strawberries, Feta & Mint

First, grill the corn. If you haven’t grilled corn before, it’s so, so easy. If you need a few tips, pop over to my Basics by The BakerMama for a quick tutorial.

Next, to shell the grilled corn, let it cool a few minutes before transferring it to a shallow bowl. Hold the corn upright and then, using a sharp knife, cut the corn off the cobb into the bowl.

To make the salad, combine the corn kernels and diced strawberries in a large bowl. Next, add the lemon juice and olive oil and stir to combine. Then, gently fold in the crumbled feta cheese and chopped fresh mint. Finally, season to taste with salt and pepper. Voila! See? I told you that was easy!

Serve immediately, or cover with plastic wrap and store in the refrigerator until ready to serve. Enjoy!

Ingredients

  • 2 cups grilled corn kernels (about 4 ears of grilled corn)
  • 1 cup diced strawberries
  • 2 tablespoons fresh squeezed lemon juice
  • 2 teaspoons olive oil
  • ½ cup crumbled feta cheese
  • ¼ cup chopped fresh mint
  • Kosher salt, to taste
  • Fresh cracked black pepper, to taste
