Grab n’ Go, Deliciously!

As a busy mom with a business, four active kids (and now a puppy!), powering through is something I’m very familiar with. And I love every minute of it! But without some form of energizing snack (protein! healthy fat!), I’m sunk! Protein bars and energy bars have their place, for sure. They’re hard to beat when it comes to convenience. But I realized that with a little bit of planning, I could create my own energy bar recipe that delivered on oomph, without all the preservatives. And My No-Bake Energy Bites fit the bill! They’re incredibly easy, crazy delicious, and provide energy that will get you through the afternoon! There’s flax seed for antioxidants and fiber, whole grain oats and honey for sweetness. And with peanut butter and bits of dark chocolate, they’re as tasty as they are healthy!

How to Make No-Bake Energy Bites

In the bowl of an electric mixer fitted with the paddle attachment, add all the ingredients except for the chocolate chips. Mix on low speed until mixture is well combined. Stir in the chocolate chips.

Next, roll mixture into 2-tablespoon sized smooth balls and place on a parchment-lined baking sheet. Place in the refrigerator for 30 minutes or enjoy right away.

Once the bites have set, transfer them to an air-tight container and store in the refrigerator for up to 2 weeks.

  • 1/2 cup ground flaxseed
  • 1 cup peanut butter
  • 1/2 cup honey
  • 1 teaspoon vanilla
  • 1/2 cup dark chocolate chips

Notes

Mixture can be pressed into an 8×8-inch baking dish and cut into bars, if desired. Other optional add-ins: 1/2 chopped nuts (such as almonds or walnuts) and 1/2 cup dried fruit

    1. Hi Niki! I use natural no-stir peanut butter. Just make sure it’s smooth, but not too runny. Hope this helps. Enjoy!
