No Bake, No Worry

Okay. I confess. I love cookie dough! But we have all heard the warnings about the dangers of eating it raw, making it way less fun to take a swipe out of the mixing bowl. Well, worry no more! I have created a HEALTHY, safe cookie dough recipe! Made without raw egg or uncooked wheat, these Healthy Edible Cookie Dough Bites are truly the perfect treat!

To make them just add 2 cups oats, honey, vanilla, coconut oil and water to a blender. Blend for about a minute or until well-combined. Add the additional 1/2 cup oats and pulse 3-4 times until oats are distributed throughout the dough.

Transfer dough to a medium mixing bowl and stir in the chocolate chips.

Finally, using a 1 1/2 tablespoon cookie scoop, scoop dough into balls. Enjoy! Store any that don’t get gobbled up in an airtight container in the refrigerator.

  • 2 and 1/2 cups 1-Minute Oats, divided
  • 1/3 cup honey
  • 3 tablespoons coconut oil, melted
  • 1 teaspoon pure vanilla
  • 1/8 teaspoon kosher salt
  • 1 tablespoon water
  • 1/4 cup chocolate chips

Instructions

    1. Hi Karen! The coconut oil adds needed moisture to hold the bites together. If you don’t plan to form the cookie dough into bites, you could leave it out completely. If you want them to hold together, I would recommend substituting the coconut oil with another oil, melted butter or more honey so they hold together nicely. Hope this helps. Enjoy!
