Single Serving, Big Yum

Make a cozy, easy, delicious breakfast for one with a Microwave Blueberry Banana Muffin in a Mug. The muffin is extra moist from the banana and blueberries with a hearty texture from the whole wheat flour and oats. Less than two minutes in the microwave and you have a warm banana muffin just bursting with blueberry flavor. It’s sure to start your morning off right and energize you for the day ahead!

Sweet and Special

I love the idea of single-serving recipes so I’m not committed to a whole batch of baked goods when I’m just wanting one (or a few in the case of my favorite cookie recipes)! I’ve already shared my scrumptious microwave brownie in a mug and my apple mug cake (soooo good!).

But the other morning I wanted a muffin so bad, but I didn’t want to bake a whole batch. I knew I would eat them all along with several other goodies I was baking that day. So I decided to come up with a delicious and nutritious muffin in a mug that would fill me up and energize me for the busy day ahead. It turned out great and I love how quick and easy it is!

I’m obsessed with eating out of a mug for some reason so starting the day with my warm muffin in a mug is pretty sweet and special to me!

Ingredients and Supplies

Ingredients:

  • Large egg: gives the muffin structure and helps it hold together so it’s not just mush. You could swap with a flax egg or even a few extra tablespoons of mashed banana, but it’ll be softer and less “muffin-like.”
  • Milk: adds moisture and helps create a tender texture. Any milk works (dairy-free, too), or even yogurt thinned with a little water for a protein boost.
  • Pure vanilla extract: adds that cozy, sweet flavor that makes it feel like a real baked good. You can skip it if needed, but a dash of almond extract or maple syrup would give a similar vibe.
  • Whole wheat flour: provides the main structure and makes it feel more filling. All-purpose flour works, or a gluten-free blend if that’s your thing.
  • Quick-cooking oats: adds texture and a little heartiness without making it heavy. You could use old-fashioned oats instead but would get a softer result.
  • Light brown sugar: sweetens and adds a slight caramel flavor. Honey, maple syrup, or granulated sugar all work as substitutes depending on what you have on hand.
  • Baking powder: helps it rise and get that fluffy “muffin” texture in the microwave. Not really skippable, but if you’re out, self-rising flour instead of whole wheat flour could cover it.
  • Ground cinnamon: adds warmth and makes it feel like a comforting baked treat. You could swap for pumpkin pie spice or leave it out if your kids are picky.
  • Mashed banana (very ripe): Check my ripeness guide! The riper the bananas, the sweeter the muffin will be! Adds natural sweetness, moisture, and acts as part of the binder. Applesauce or pumpkin puree would work, but banana gives the best flavor here.
  • Fresh blueberries: add bursts of sweetness and make it feel fresh and fun (and a little healthier). Frozen blueberries, raspberries, or even chocolate chips (if I’m being honest with myself) could all be substituted for the fresh blueberries.

How to Make a Microwave Blueberry Banana Muffin in a Mug

  • In a large microwavable mug, whisk together the egg, milk and vanilla.
  • With a fork, stir in the flour, oats, brown sugar, baking powder, and cinnamon.

  • Fold in the bananas and blueberries.
  • Sprinkle with a little more cinnamon and/or brown sugar, if desired.
  • Place the mug on a microwave safe plate.
  • Microwave for 90 seconds to 2 minutes until the muffin is set. The muffin will rise above the top of the mug, but will go back down once you open the microwave. Let cool 5 minutes before enjoying!

      1. Hi Daniel! 90 seconds to 2 minutes is plenty of time to cook the egg. Any longer and the eggs would overcook causing a weird texture and/or taste to the muffin.
