Cheesy, eggy and so filling, this Hash Brown Breakfast Casserole is a great way to start the day! It has a delicious hash brown base topped with egg, ham and fresh vegetables that everyone is sure to devour. It reheats beautifully too. What’s not to love?

Heat and Go Breakfast

Summer breakfasts at our house are all over the place. Without no schedule to stick to, the kids get up on their own timetable. This breakfast casserole recipe is perfect for making ahead and letting everyone heat up on their own. I just cut it into squares and store in an airtight container with parchment paper between slices.

Hash Browns or Hashbrowns?

Spell check might disagree, but you can spell it either way! Hashbrowns, hash browns, or hashed browns (whew!) are a staple at our house. But no matter how you spell it, this hashbrown breakfast casserole is a must-bake!

If you happen to have shredded hash browns handy, you can use those in place of the patties. Just distribute evenly in a half-inch layer on the bottom of the dish.

Perfect for Special Occasions or Every Day

We love a good breakfast bake for a holiday breakfast, like Christmas morning. But this casserole is easy enough for every day. I love that you can feed a crowd with the (it serves 12) or save it for the rest of the week.

Spice it Up or Down

I’ve made this hash brown casserole with Pepper Jack cheese before and it’s so good. If you want to kick it up another notch, try adding a dash of hot sauce before eating. And if you have some picky eaters, it’s okay to leave out the red and green pepper. It loses a bit of the flavor for me, but does make it more kid-friendly.

Ingredients:

  • Frozen hash brown patties (I use Trader Joe’s brand)
  • Diced ham
  • Red bell pepper
  • Green bell pepper
  • Yellow onion
  • Shredded Monterey jack and cheddar cheese blend (or pepper jack)
  • Large eggs
  • Milk
  • Salt
  • Garlic powder
  • Pepper

How to Make Hash Brown Breakfast Casserole

  • Preheat the oven to 350°F. Spray a 9×13-inch casserole dish with nonstick cooking spray.
  • Arrange the frozen hashbrown patties side by side to cover the bottom of the dish.
  • Cover the patties with the diced ham, red bell pepper, green bell pepper and yellow onion.
  • Sprinkle everything evenly with the shredded cheese. 
  • In a large bowl, whisk together the eggs, milk, salt, garlic powder and pepper until well combined.

  • Pour the egg mixture over everything in the baking dish.

  • Cover the baking dish with foil and bake for 30 minutes. 
Cover the baking dish with aluminum foil and bake for 30 minutes.
  • Uncover and bake for an additional 15-20 minutes or until the eggs are set and the casserole is golden around the edges.
  • Allow to cool 5 minutes before slicing and serving.

How to Store Hash Brown Breakfast Casserole

Store hash brown casserole in the refrigerator, wrapped tightly in plastic wrap.

Reheat it in a 300°F oven for about 20 minutes before serving. Or slice it into squares and reheat individually in the microwave for about 30 seconds.

To freeze, allow to come to room temperature. Store individual pieces in a plastic, freezer safe container with parchment or wax paper between each slice.

Thaw completely in the fridge overnight before reheating.

To Make it in Advance

To prepare in advance, follow instructions to the point of baking. Then cover with plastic wrap and store in the refrigerator overnight or up to 24 hours before baking according to the recipe directions.

  1. Hi there! Delicious! But I’m curious if there is a way to make the hashbrowns yourself, or do you have to buy frozen packaged ones? Thanks!






    1. Hi Tamara! You could certainly shred raw potatoes and bake them in a single layer on a greased sheet pan until they’re golden brown first and then use them instead of the frozen. I haven’t made the casserole this way myself, but I think it would turn out great. Hope this helps and that you get to enjoy it soon!
