Easy Treat for the Summer Holidays

Fresh sweet berries, buttery poundcake and cool whipped topping come together in these adorable, easy-to-assemble skewers that make quick work of your summer holiday entertaining. They taste just like your favorite shortcake! Perfect for Memorial Day, Independence Day or Labor Day, they’re sure to become the go-to treat that your guests will gobble up. So fun and festive!

Handy Shortcake

There’s no summer dessert that is quite as light and refreshing as shortcake. Fresh fruit, whipped cream and buttery, spongey cake. It’s my absolute favorite. I’ve taken a twist on this seasonal favorite with my Strawberry Scone Shortcakes and my Caramel Apple Pecan Shortcakes. For the ultimate entertaining spread, my Summer Shortcake Board has it ALL.

But I love these little skewers for how simple they are. The prep is so quick! Store-bought frozen poundcake (you’ll want to thaw it first!), fresh berries and whipped topping (or homemade whipped cream). Could it get any simpler?

Make Ahead & Serving Tips

Make Ahead Tip:

These skewers can easily be assembled several hours or up to a day in advance. Arrange them on a platter, cover loosely, and refrigerate until ready to enjoy.

Serving Tip:

Serve chilled with whipped topping for dipping. Scatter extra berries around the platter and/or serve the whipped topping in a star-shaped bowl for an extra festive presentation!

Storage Tip:

Store any leftover skewers in an airtight container in the refrigerator for up to 2 days. The berries may soften and the pound cake will absorb some of their juices over time, but they’ll still taste delicious.

How to Make Patriotic Shortcake Skewers

  • Slice the pound cake into 3/4-inch thick slices.
  • Using a 2-inch star cookie cutter, cut 12 stars from the pound cake slices.
  • Cut remaining pound cake into twelve 3/4-inch cubes for the skewer bases.
Steps to make shortcake skewers with thawed poundcake.
  • Assemble each skewer in this order: pound cake star, raspberry, blueberry, whole strawberry (with top removed), pound cake cube base.
  • Stand the skewers upright on a serving platter or plate using the pound cake cubes as the base.
  • Serve chilled with whipped topping for dipping.

  • 1 (16-ounce) frozen classic pound cake, thawed
  • 12 raspberries
  • 12 large blueberries
  • 12 strawberries, tops removed
  • 1 bowl whipped topping, for serving

Supplies:

  • 12 (4-5 inch) skewers with red ball tops
  • 2-inch star cookie cutter


Instructions

  1. Slice the pound cake into 3/4-inch thick slices.
  2. Using a 2-inch star cookie cutter, cut 12 stars from the pound cake slices.
  3. Cut remaining pound cake into twelve 3/4-inch cubes for the skewer bases.
