Y’all, I love my job so much. Some days it truly is hard to believe that THIS is what I get to do! Make food that inspires folks to spend time with their loved ones enjoying good food and great company. It’s even harder to believe when my cookbooks and boards get featured on The TODAY Show!

We were so excited! To celebrate, I made this Mini Muffin and Cinnamon Roll Breakfast Board to share this exciting morning with my family and team. It’s such a fun treat to bring your family together! Fresh fruit, crispy baked bacon, and irresistibly yummy mini cinnamon rolls and our favorite mini banana chocolate chip muffins. Delicious!! So, throw on a pot of coffee and let’s build a breakfast board together!

Mini Cinnamon Rolls

Mini Cinnamon Rolls are a scrumptious, bite-sized way to get the morning off to a yummy start!

  • First, preheat the oven to 350°F. Spray a 24 cup mini muffin pan with non-stick cooking spray and set aside. Then, on a large cutting board, unroll each cinnamon roll and cut it into four equal-sized strips, each about 4 inches long. 
  • Reroll each smaller strip of dough back up into a cinnamon roll shape and place it in a sprayed mini muffin cup. You should get 20 mini cinnamon rolls out of 1 (17.5 ounce) can jumbo cinnamon rolls. Repeat with remaining strips.
  • Bake for 12-15 minutes, rotating pan halfway through the baking time, until the tops of each roll are golden. Remove from the oven, place on a cooling rack and drizzle the icing over the warm cinnamon rolls.

How to Make a Mini Muffin and Cinnamon Roll Breakfast Board

Bake the Mini Banana Chocolate Chip Muffins, Mini Cinnamon Rolls and Baked Bacon. Keep the bacon warming in a 200°F oven while you prepare the board.

Wash the fresh fruit and set aside to dry. Slice the strawberries, leaving a few whole. Place the fruit in mini serving bowls and arrange down the middle of an 18” x 12” wood board.

Arrange the mini muffins along one side of the fruit on the board and the mini cinnamon rolls along the opposite side. Pile the bacon in the corners of the board near the cinnamon rolls. Arrange bunches of grapes and whole strawberries in any spots of the board that need to be filled.

    1. Hi Diane! Yes, just let them cool completely and then place them in a single row in a freezer-safe container and cover tightly with a lid or foil. They store great for up to 2 months. Let them defrost in the refrigerator for a few hours or overnight. I would reheat them in batches in the microwave for about 10 seconds per batch or until just heated through if you want to serve them warm. Hope this helps. Enjoy!
