Custom Ice Cream Sandwiches

Different flavors, shapes and sizes of cookies make the experience all the more fun and yum. For a large crowd, I go all out with a variety of home-baked and store bought cookies. You can definitely pare this down for a smaller group.

A variety of roll ins, like mini chocolate chips, mini marshmallows, fruity cereals, sprinkles, and nuts make the possible flavor combinations seem endless! You can watch me build one here.

Tiny and Tasty

I love to offer small cookies, like Nilla Wafers and mini chocolate chip cookies. That way, we can build a few different smaller creations rather than committing to one larger one. Taste your way around the board! I mean, how cute and fun is this?

Ice Cream Tips

I like to use pints of ice cream so I can include several different flavors of ice cream in the middle of the board. But you could certainly use one large container of one flavor of ice cream in the middle.

Make sure you surround the ice cream pints with ice to keep them frozen as long as possible!

How to Make a Cookie Ice Cream Sandwich Board

  • Place a 9” cake pan or container in the middle of a large board.
  • Put the mix-ins in individual shallow bowls and arrange them around the board. (Shallow bowls are easiest to roll cookies in)
  • Fill in the board with a variety of cookies.
  • Just before you’re ready to serve, place the ice cream pints in the container in the middle of the board.
  • Fill the container around the pints with ice to keep them frozen as long as possible.
  • Serve immediately and let everyone enjoy creating their own ice cream sandwiches.
