A Little Taste of Paradise

There’s something pretty magical about food memories you make together as a family. Recently, we put down our work and headed to Costa Rica for some family time, and it was an amazing experience. And of course, a big part of that experience was the food! One of our favorite lunch spots had an avocado rice dish on the menu that I could not get enough of. I knew I had to come home and recreate it. And this Avocado Rice hits the spot! Every little bite reminds me of that week in paradise.

To create this Avocado Rice, I adapted my Cilantro Lime Rice recipe from page 68 of my Spectacular Spreads cookbook to include mashed avocado and it’s so delicious! The recipe was already a winner, with tangy lime zest, peppy garlic and fresh cilantro (related: learn how to clean cilantro). But the added creaminess of the avocado is truly a game changer. I just know y’all are going to love it, too!

How to Make Avocado Rice

First heat the olive oil in a medium saucepan over medium-high heat. Then add the garlic and cook until fragrant, about 1 minute. Add the rice, salt, and water to the saucepan and stir to combine.

Increase the heat to high and bring the water to a boil. Once boiling, cover, reduce the heat to low, and let simmer for 15 minutes. Remove from the heat and let stand, covered, for 5 more minutes, then fluff the cooked rice with a fork. Add the zest and juice of the lime and the cilantro to the pan and gently stir to combine.

Fold in the lightly mashed avocado. Season with more salt, if desired.

Ingredients

  • 1 teaspoon olive oil
  • 1 clove garlic, minced
  • 1 cup long-grain white rice
  • 1 teaspoon kosher salt, plus more if needed
  • 1 and 3/4 cups water
  • 1 large lime
  • 1/4 cup chopped fresh cilantro
  • 2 medium avocados, lightly mashed with chunks

Instructions

  1. I have that gene that makes cilantro taste like dish soap, so is there anything I could replace it with, or would it be okay to just leave out?
