Cookie Magic in Minutes

This warm, decadent Single-Serve Microwave Chocolate Chip Cookie comes together in just minutes with pantry staples, a microwave-safe ramekin, and a quick zap in the microwave. A homemade treat that’s so easy to make, the older kids will be pros in no time. And of course, it’s made even more scrumptious with a scoop of vanilla ice cream, a swirl of whipped cream, or some flaky sea salt!

Sweet Tooth? No Sweat!

You know how it goes. That craving creeps in somewhere between dinner and bedtime. You need a chocolate chip cookie and you’re not in a hurry to make a big mess in the kitchen for a homemade treat. I can’t tell you have many times I’ve made my Microwave Brownie in a Mug, or an Apple Mug Cake (perfect for chilly fall evenings!) in a pinch.

You can absolutely make this cookie in a mug, but I’d recommend using a wider, cappuccino style mug so the cookie cooks evenly. Otherwise, a microwave-safe ramekin is your best bet.

Ingredients and Supplies

(see recipe card at the bottom of this post for measurements and details. To learn more about specific baking ingredients and how they function in baking recipes, reference my Complete Guide to Baking Ingredients)

Ingredients:

  • Unsalted butter: adds richness, moisture, and buttery flavor while keeping the cookie soft and tender. If you use salted butter, you might consider using less salt in the recipe as it will affect the sweetness of the cookie.
  • Light brown sugar: adds sweetness, moisture, and a subtle caramel flavor that gives the cookie a soft, chewy texture. You can use dark brown sugar instead, but the flavor will be a bit richer.
  • Granulated sugar: adds sweetness and helps balance the cookie’s texture.
  • Pure vanilla extract: enhances the overall flavor and adds a warm, classic cookie taste.
  • Kosher salt: balances the sweetness and brings out the flavors of the chocolate and other ingredients. Table salt will actually pack a saltier punch than Kosher salt so if you only have table salt, adjust accordingly.
  • Large egg yolk: binds the ingredients together while adding richness and creating a soft, tender texture. Learn how to separate an egg.
  • All-purpose flour: provides structure and gives the cookie its shape and texture.
  • Baking powder: gives the cookie a slight lift, keeping it from becoming too dense.
  • Semi-sweet chocolate chips: add pockets of melted chocolate and delicious chocolate flavor throughout the cookie.

For serving (optional):

  • Flaky sea salt: adds a delicate crunch and a salty contrast that enhances the chocolate flavor.
  • Vanilla ice cream: adds a cool, creamy contrast to the warm, gooey cookie.
  • Whipped cream: adds a light, fluffy sweetness that complements the rich cookie.
