Layers of pumpkin yogurt, pure pumpkin, and pumpkin seed pecan granola clusters come together for a delicious and nutritious way to start a fall day!
I recently hosted a pumpkin palooza brunch and these mini parfaits were part of each person’s place setting as an appetizer (or accompaniment of sorts) to the main brunch spread. Everyone loved them and gobbled them up quickly!
They’re so easy to make with just three simple ingredients and all of the pumpkin flavor and textures are just so yummy you won’t be able to put your spoon down.
I’m so obsessed with Noosa’s pumpkin yoghurt and Kroger’s Simple Truth Pumpkin Seed Pecan Granola Clusters. And when you combine them with some pure pumpkin in the middle, I get all giddy over how great it tastes. And how wholesome and filling it is.
Just 3 great ingredients that you’ll want to keep on hand so you can make them again and again…
I start with a layer of Noosa pumpkin yoghurt. So creamy and so well done on the pumpkin flavor…
Next up is just pure pumpkin. The texture of the pumpkin compliments the creamy yogurt and crunchy granola so well…
And finally is a heaping handful of Kroger’s Simple Truth Pumpkin Seed Pecan Granola Clusters. I’m a sucker for good granola clusters and this granola is one of my new faves. Perfect pumpkin flavor, crunchy yet still easy to chew, and lots of bite-size clusters. Love it!
And that’s it, y’all! These parfaits scream fall, don’t they?
If you’re hosting a crowd or just want to get ahead with food prep for the week, these parfaits are great for making ahead (even several days before you plan to eat them) and they’re so easy to make in large batches. Just create a little assembly line!
Whether you make them mini or make them large, you’ll want to make and enjoy these pumpkin yogurt and granola parfaits all fall long. Enjoy!
