These Nilla Wafers Pop Tart Bites are easy to make, so fun to eat, and always a huge hit with my crew. Your favorite jam between two bite-sized vanilla wafer cookies topped with icing and colorful sprinkles. It’s a tiny and delicious party!

Easy Homemade Pop Tarts
Y’all know how much I love to experiment with our favorite foods. Pop tarts are such a fun childhood treat. My Strawberry Sheet Pan Pop Tart and my Cinnamon Brown Sugar Sheet Pan Pop Tart are perfect for entertaining a houseful of kiddos at parties and sleepovers. And my Conversation Heart Pop Tarts are a Valentine’s Day must in our house! I created a mini pop tart recipe for my Brilliant Bites cookbook, but this one is even EASIER and guaranteed to be a winner.

These cute little pop tart bites would be perfect for an easy birthday treat or after school snack to celebrate that special someone. The colorful confetti sprinkles make them so fun and festive. And they’re so simple to put together, the kids could definitely get in on the action.

Ingredients and Supplies

Ingredients:
- Nilla Wafers cookies: these are the “crust” of the pop tart bites! Since they’re already sweet and vanilla-flavored, they keep the recipe super low-effort (no baking required!). You could substitute them with graham crackers, shortbread cookies, or even animal cookies for an even more playful treat!
- Strawberry jam: what makes the bite taste like a mini pop tart. Adds sweetness, fruitiness, and moisture to hold the bites together. You can use any flavored jam or combine it with peanut butter for a PB&J pop tart. You could also substitute the jam with Nutella for a richer treat.
- White cookie icing: acts as the “frosting”. It’s decorative but also adds that sugary pop tart vibe. Because it hardens, it locks in the sprinkles so be sure to add the sprinkles shortly after icing the bites. Store bought makes this treat so easy, but you can always throw together a batch of my simple icing for a homemade version.
- Rainbow sprinkles: the fun factor! They make the bites look festive and kid-approved while giving a little crunch. You could substitute with mini chocolate chips, crushed candies, or crushed freeze-dried strawberries. To really get festive, you can use seasonal sprinkles depending on the holiday (hearts for Valentine’s Day, orange/black for Halloween, or red/green for Christmas).

How to Make Nilla Wafer Pop Tart Bites
- Place 20 Nilla Wafers cookies flat-side up on a work surface or tray.
- Place about 1/2 teaspoon of strawberry jam on each of the 20 wafers. Be careful not to overfill.
- Press a second Nilla Wafer, flat-side down, on top of each jam-covered wafer to create a sandwich.
- Spread a small amount of cookie icing on the top of each bite, just enough to cover a small area so some of the top cookie is still showing to give them that “pop tart frosting” look.
- Immediately sprinkle a pinch of rainbow sprinkles on top of each bite before the icing sets.
- Let the icing set for about 10 minutes before serving. Enjoy!

Storage
They’re honestly best eaten within a few hours since the jam can start to soften the Nilla Wafers. I would recommend making just enough for the occasion. If you’re making them for a party or after-school snack, you could assemble them the morning of. They’re more of a whip up, serve and watch them disappear kind of treat!
Otherwise, you can store them in an airtight container at room temp for up to 1 day. The cookies will soften a bit (almost like a whoopie pie texture), but some people might actually like that.
