Sausage Egg Casserole

Before you lay out the spread, you need to make the Sausage Egg Casserole. One of my absolute favorite brunch dishes.

It’s an easy make-ahead breakfast that reheats in a snap before your guests arrive. Protein-packed with eggs, sausage and cheese and loaded with fresh peppers, it’s a delicious way to start the day!

How to Make the Brunch Spread with Friends

  • To make the Brunch Spread, first arrange a few small vases with fresh flowers and set them out on the space where you plan to set the spread.
  • Prep the ingredients by washing the grapes and berries and set aside to dry. Then slice three oranges into wheels and cut the watermelon into wedges. Slice pineapple and mango into chunks.
  • Once dried, cut about 10 of the strawberries in half and dice the rest to make about 1 cup of diced strawberries. Combine the diced strawberries and blueberries in a mixing bowl.
  • Make the Sausage Egg Casserole, bake the bacon and cook the sausage links. Once cooked, keep them warming in a 200°F oven while you finish preparing the rest of the spread.
  • Fill small bowls with almond butter, raspberry preserves, honey, blueberry preserves and hazelnut spread. Place them down the middle of a 20” round wood board.
  • Arrange the mini muffins, sweet rolls, mini bagels, and croissants on the board.
  • Place a toaster nearby for guests to toast their bagels in, if desired.

  • Place the Specially Selected Chocolate Chip Brioche loaf on a wood paddle board. Go ahead and slice a few slices to get the spread started. Then arrange donuts on a small cake stand.
  • Next, fill small bowls with raspberries, pineapple chunks, mango chunks, and a mix of the blueberries and diced strawberries.
  • Place them in the middle of a 14” round wood board. Arrange orange wheels, watermelon wedges, strawberry halves and grape bunches around the bowls on the board.
  • Fill small bowls with granola, raspberries, a mix of blueberries and diced strawberries, and banana slices.
  • Arrange them on half of an 18” x 12” wood board.
  • Then, fill a small jar with honey and place it on the board as well. Finally, place unopened Friendly Farms Nonfat Greek yogurt cups on the other half of the board.

  1. Hello! Can I make the Sausage Egg Casserole the night before and just place in oven for a little longer the next day?

    1. Hi Andrea! Absolutely, you can either bake it the night before and let it cool completely before storing in the refrigerator overnight to reheat the next morning. Or you could just prep it and cover it tightly to store in the refrigerator overnight and bake completely the next morning. Such a great recipe to prep or make in advance. Enjoy!

  2. Hi! I want to do this exact brunch spread this weekend and followed the link to your handy shopping list but it just took me straight to Aldi’s website. Please can you share the right link? Thank you 🙂

    1. Hi Tayla! If you scroll to the very bottom of the post, there’s a printable box for the breakfast casserole and then another printable box for the full spread shopping list. Hope this helps. Have fun serving it! Enjoy!
