If you’re already a fan of the Microwave Brownie in a Mug, you’re going to love this personal-size, autumnal offering. I love the combination of fresh apple, warm cinnamon and nutmeg spices in a soft and sweet cake. And if you’ve already tried my Apple Nachos, my Baked Apple Fritters or my Fresh Apple Cake, you know I’m not messing around when it comes to fall apple desserts.

I love to take things up a notch with a scoop of vanilla ice cream and a drizzle of caramel sauce. I mean, go big or go home, right?! It’s so yummy!

This apple cake is so simple to make, even younger children can get involved in making it with a little supervision. It’s so fun to let them do the mixing and microwaving their own personal apple cake. Within minutes, everyone can have their very own dessert that tastes like a warm hug.

Ingredients and Supplies

Ingredients:

  • Unsalted butter: adds richness, flavor and moisture. If you use salted butter, you might consider using less salt in the recipe as it will affect the sweetness of the cake.
  • Milk: adds moisture to form a smooth batter.
  • Vanilla extract: rounds out the flavors and adds warmth. A splash of almond extract with the vanilla can make the apple pop even more.
  • All-purpose flour: gives the cake its body and helps everything hold together. You can use a 1:1 gluten free all-purpose flour or swap with whole wheat flour for a nuttier flavor.
  • Light brown sugar: adds sweetness, moisture and a deeper caramel note.
  • Ground cinnamon: adds warmth and flavor. Pairs beautifully with the apples and brown sugar.
  • Ground nutmeg: adds a warm, nutty note. A little goes a long way and you would honestly miss it if it weren’t there.
  • Baking powder: makes the cake rise and stay fluffy instead of dense.
  • Kosher Salt: balances the sweetness and enhances all the other flavors.
  • Apple: The star of the recipe! Apple adds moisture, natural sweetness and a little texture. Use a firm apple (like Honeycrisp or Granny Smith) so it doesn’t turn mushy.
  • Chopped walnuts (optional): adds crunch and flavor contrast to the sweet, soft cake. Feel free to substitute with pecans or sliced almonds.

How to Make Apple Mug Cake

  • In a microwave-safe mug (8 to 10 ounce size), melt the butter in the microwave until just melted.
  • Whisk in the milk and vanilla.
  • Add the flour, brown sugar, cinnamon, nutmeg, baking powder and salt.
  • Whisk until you have a smooth batter.
  • Add the chopped apple and walnuts (if using).

  • Fold in gently.

  • Smooth the batter into the mug with a spatula or the back of a spoon and clean around the edges a bit with a paper towel.

  • Microwave on high for 90 seconds to 2 minutes, depending on the power of your microwave. It should rise and look set but moist.

  • Top with a scoop of vanilla ice cream, a drizzle of caramel syrup and more chopped walnuts, if desired. Enjoy!
