For Your Avocado Obsession

I’m obsessed with avocados. I mean, who’s not these days?! They’re all the craze. Healthy, delicious and oh so satisfying.

I pretty much keep avocados stocked like I do bananas (I just wish they were as cheap as bananas!) because I can always find a way to incorporate an avocado into my meal or snack. I’m either blending them in my guacamole or mashing them on my toast or grilling them to put on a salad or spreading them in these avocado roll ups.

Quick and Easy

These roll ups have become one of my favorites lately because they’re sooo quick and easy to make.I just mash an avocado and mix in some cilantro, lime and salt. Then I spread it on the tortillas, roll them up, and cut them into bite-sized pieces that I can easily eat while multi-tasking or serve to a crowd.

If you’re like me and always have an avocado on hand, you’ll love this great way to turn it into a delicious meal, snack or party app. Did I mention they make a great lunch? So simple and satisfying! Just like avocado toast and guacamole, I don’t think I’ll ever get sick of eating these roll ups.

Ingredients and Supplies

Ingredients:

  • Avocado: creates the creamy, satisfying base of the filling and gives the roll-ups their fresh avocado flavor.
  • Cilantro: adds a bright, herby freshness that pairs perfectly with the avocado and lime. Learn how to wash cilantro properly so that it adds flavor, not grit, to your favorite Mexican and Southwest dishes.
  • Lime: adds a fresh, tangy pop that brightens the avocado and also helps slow browning.
  • Kosher salt: enhances all the flavors and makes the simple avocado filling really come alive.
  • 9-inch round tortillas: hold all that creamy avocado goodness together and make the roll-ups easy to roll, slice, and eat. Soft tortillas are best, so they won’t rip while rolling.

How to Make Avocado Roll Ups

  • In a small mixing bowl, mash the avocado.
  • Stir in the cilantro and lime juice. Season to taste with salt.
  • Add half of the avocado mixture to each tortilla.

  • Spread, leaving a small border around the edges. Roll the tortillas up tightly, then cut off the edges and slice into 1” rolls.
  • Serve immediately or cover and refrigerate until ready to serve.

Storage

Store leftover avocado roll-ups in an airtight container in the refrigerator for up to 2 days. Because avocado browns quickly, these are best enjoyed fresh.

You can assemble the roll-ups a few hours ahead. Wrap them tightly in plastic wrap or place in an airtight container and refrigerate until ready to slice and serve. The lime juice will help slow the avocado from browning, but I wouldn’t prep them a full day ahead if you want them looking their freshest.

  1. I think I found my avocado soulmate. lol I’m obsessed with them too, I have one every morning for breakfast, I just peel it and eat it like a banana/apple. I then find a way to sneak a tiny one in my lunch or dinner. Avocado cilantro rice is one of my favorite dishes but I can already see Im going to looove these. They look delicious, my mouth is salivating for one now. lol
    Thanks for sharing your recipes, I was able to find my grandma’s chocolate and coconut cream pies here (she’s not able to cook anymore) so I can make them and take them to her for Easter.

  2. Looks Delish! If made a day in advance, will the avocado brown much, or does the lime and cream cheese mixture help with that?

    1. Hi Charlene! If you make them a day in advance, I would recommend waiting to slice them until you’re ready to serve them. Less exposure and the lime will help prevent the avocado from browning. Hope this helps. Enjoy!
