Ingredients and Supplies

(see recipe card at the bottom of this post for measurements and details)

Ingredients:

  • All-purpose flour: keeps the pie dough from sticking to your work surface, making it easier to roll, cut, and weave into a lattice.
  • Refrigerated rolled pie crusts: give the cookies their slightly sweet, buttery flavor, and a crispy, flaky texture when baked. Store-bought pie crusts such as Pillsbury or JusRol make this recipe quick and easy or you could use my homemade pie crust recipe.
  • Large egg: brushed over the cookies before baking to give them a beautiful golden color and slightly glossy finish as they bake, and helps the sparkling sugar stick to the surface of the cookies.
  • Water: thins the egg wash so it’s easier to brush evenly over the cookies.
  • Sparkling sugar: adds a sweet, crunchy topping and a pretty sparkle that makes these cookies extra special.

How to Make Lattice Pie Cookies

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  • Lightly flour your work surface, then unroll the piecrusts. Using a rolling pin, roll each crust slightly thinner, about 1/8-inch thick. Using a pizza cutter or sharp knife, cut into 1/4-inch-wide strips.
  • On another lightly floured work surface, arrange half of the strips vertically, side by side, leaving a small space between each strip. Fold back every other strip halfway.

  • Lay 1 strip horizontally across the unfolded strips.
  • Then return the folded strips over the top.

Make Ahead and Storage

Make Ahead: These Lattice Pie Cookies are perfect for making ahead! Bake them up to 4 days in advance and store in an airtight container at room temperature until ready to serve. Be sure to let them cool completely before storing to keep them crisp and flaky.

Storage Tips: Place parchment paper between layers to protect their delicate lattice design. For longer storage, freeze the baked and cooled cookies in a freezer-safe container for up to 2 months. Thaw at room temperature before serving. If they lose some of their crispness, pop them in a 300°F oven for 3–5 minutes to freshen them up!
