Shredded rotisserie chicken, cream cheese, cheddar cheese and salty, crispy bacon coated in ranch seasoning all rolled up in a corn tortilla and baked into a crispy finger food that makes dinner a breeze. My Bacon Cheddar Chicken Taquitos are easy, fun and filling, perfect for a midweek meal. They’re also great for game day or snack time when you have a hungry crowd to feed!

Midweek Bliss
If you’re a busy parent, you love getting dinner on the table without a lot of fuss. Whether it’s putting an effortless sheet pan dinner in the oven, or a breakfast casserole recipe that gets everyone excited for breakfast for dinner, everyone could use some family-favorite hot meals in minutes.
This taquitos are baked in the oven for less mess and stuffed with shredded rotisserie chicken for less stress. Just mix up the ingredients, fill, roll, and bake. Serve with your favorite salad or veggie for a meal they’ll love. They could not be easier! Or more delicious! We love to dip them in cilantro lime ranch, but absolutely use your favorite salsa or dipping sauce for extra yum. Ingredients and Supplies

- Shredded rotisserie chicken: forms the hearty, protein-packed base of the filling while keeping the recipe quick and easy.
- Cream cheese (softened): adds creaminess and helps bind the chicken, cheese, bacon, and ranch seasoning together.
- Shredded cheddar cheese: adds rich, cheesy flavor and melts into the filling as the taquitos bake.
- Ranch seasoning: gives the filling its signature tangy, herby ranch flavor.
- Bacon (cooked and crumbled): adds smoky, salty flavor and a little texture to the creamy chicken filling.
- Small soft corn tortillas (5-inches wide): hold the filling and bake up crisp and golden on the outside while staying sturdy enough for dipping. Small flour tortillas can be used, though the finished taquitos will have a softer, slightly different texture.
- Olive oil spray: helps the tortillas become evenly golden and crispy in the oven without frying.
- Chopped fresh cilantro (for garnishing): adds a fresh, bright finish that balances the rich filling.
- Lime wedges (for serving): a squeeze of lime adds fresh acidity that cuts through the richness of the bacon, cheese, and ranch.
- Cilantro lime Ranch dressing (for serving): adds a cool, creamy, tangy dipping element that complements the crispy taquitos. Regular ranch dressing, avocado ranch, or any favorite sauce or salsa would all be good options.
Supplies:
- Rimmed baking sheet
- Nonstick cooking spray or parchment paper
- Stand mixer or electric hand mixer
- Paper towels

How to Make Bacon Ranch Chicken Taquitos
- Preheat oven to 425°F. Spray a rimmed sheet pan with non-stick cooking spray or line with parchment paper.
- Using an electric stand or hand mixer, mix together the chicken, cream cheese, cheddar, ranch seasoning, and crumbled bacon until well combined.
- Stack the corn tortillas on a plate. Cover them in damp paper towels. Microwave for 30–45 seconds until warm and pliable. Keep covered while rolling the taquitos so they stay soft.
- Spoon 1 heaping tablespoon of filling onto each tortilla.

- Spread filling down the center of the tortilla and roll tightly.
- Place seam-side down on the prepared sheet pan.
- Spray the taquitos lightly with olive oil cooking spray.
- Bake 15–18 minutes or until crispy and golden brown all over.
- Serve garnished with chopped fresh cilantro, lime wedges and cilantro lime Ranch for dipping.

Storage
Storing Leftovers: Let the taquitos cool completely, then store them in an airtight container in the refrigerator for up to 3 days.
Reheating: For the crispiest results, reheat the taquitos in a 375°F oven or air fryer until heated through and crisp, about 5–10 minutes. I’d avoid the microwave when possible, as it will soften the tortillas.
Freezing: These taquitos are great for freezing! Let baked taquitos cool completely, then freeze them in a single layer before transferring to a freezer-safe bag or container for up to 2 months. Reheat straight from frozen in a 375°F oven or air fryer until hot and crispy, adding a few extra minutes as needed.
Make-Ahead Freezer Option: You could also assemble and freeze them before baking. Freeze the rolled taquitos in a single layer, then transfer to a freezer-safe container; when ready to eat, spray with olive oil and bake from frozen, adding several minutes to the original 15–18 minute bake time.
