This skillet brownie is everything a great brownie should be. Chewy, crispy edges, a gooey fudgy center with pockets of melting chocolate chips and a salty finish. Every bite is rich and chocolatey and there’s plenty to go around!

Ingredients and Supplies

Ingredients:

  • Unsalted butter: adds richness, moisture, and that classic fudgy texture.
  • Semi-sweet chocolate chips (divided): melted into the batter for deep chocolate flavor and pockets of gooey chocolate throughout. Dark chocolate chips work great as a substitute. Milk chocolate chips can be used, but will make it noticeably sweeter.
  • Granulated sugar: sweetens the brownie and helps create the shiny, crackly top.
  • Large eggs: bind everything together while giving the brownies structure and chewiness.
  • Pure vanilla extract: enhances and rounds out the chocolate flavor.
  • All-purpose flour: provides just enough structure while keeping the brownies soft and tender.
  • Unsweetened cocoa powder: intensifies the rich chocolate flavor without adding extra sweetness. Dutch-processed cocoa works great too.
  • Kosher salt: balances the sweetness and makes the chocolate flavor pop. Table salt will actually pack a saltier punch than Kosher salt so if you only have table salt, adjust accordingly.
  • Baking powder: gives the brownies a slight lift so they’re fudgy but not too dense.
  • Flaky sea salt (optional, for garnishing): adds a delicious salty crunch that enhances every bite.
  • Vanilla ice cream (optional, for serving): the perfect creamy, cool topping to contrast the warm, fudgy brownie. Whipped topping would be a delicious topper too!

How to Make an Easy Fudgy Skillet Brownie

  • Preheat oven to 350°F.
  • Place butter in a 10-inch cast iron skillet over low heat until melted. Remove from heat.
  • Stir in 1 cup chocolate chips until melted and smooth.
  • Whisk in the sugar.

  • Add eggs and vanilla.
  • Whisk until glossy.
  • Add the flour, cocoa powder, salt, and baking powder.
  • Stir until well combined.

  • Fold in the remaining 1/2 cups chocolate chips. Smooth batter in skillet.
  • Bake for 24-26 minutes until edges are set and the top is crackly with a slightly soft center.
  • Remove from the oven and sprinkle with flaky sea salt, if desired.
  • Let cool 10 minutes. Top with vanilla ice cream, hot fudge, and/or whipped cream to share or let each person scoop their own serving and top as they wish.

Storage

To store, cover the cooled skillet tightly with plastic wrap or transfer leftovers to an airtight container. Store at room temperature for up to 3 days or refrigerate for up to 1 week.

Rewarm individual servings in the microwave on a microwave-safe dish for 15–20 seconds or cover the skillet in foil and place in a 300°F oven for 6-8 minutes until heated through. Serve warm with a scoop of vanilla ice cream for the ultimate treat.
