Grab n’ Go, Deliciously!

As a busy mom with a business, four active kids (and now a puppy!), powering through is something I’m very familiar with. And I love every minute of it! But without some form of energizing snack (protein! healthy fat!), I’m sunk! Protein bars and energy bars have their place, for sure. They’re hard to beat when it comes to convenience. But I realized that with a little bit of planning, I could create my own energy bar recipe that delivered on oomph, without all the preservatives.

And My No-Bake Energy Bites fit the bill! They’re incredibly easy, crazy delicious, and provide energy that will get you through the afternoon! There’s flax seed for antioxidants and fiber, whole grain oats and honey for sweetness. And with peanut butter and bits of dark chocolate, they’re as tasty as they are healthy!

Ingredients and Supplies

  • Electric mixer fitted with the paddle attachment
  • Baking sheet
  • Parchment paper

Tips!

  • An electric mixer or hand mixer works best for combining the ingredients thoroughly, but you can use a sturdy spoon to combine everything well. 
  • Use a 2-tablespoon sized cookie scoop to keep the bites even in size and for easy rolling
  • If you don’t want to make the mixture into bites, you can press the mixture into an 8×8-inch baking dish and cut into bars.

How to Make No-Bake Energy Bites

  • In the bowl of an electric mixer fitted with the paddle attachment, add all the ingredients except for the chocolate chips. Mix on low speed until mixture is well combined.

  • Stir in the chocolate chips.

  • Next, roll mixture into 2-tablespoon sized smooth balls and place on a parchment-lined baking sheet. Place in the refrigerator for 30 minutes or enjoy right away.
  • Once the bites have set, transfer them to an air-tight container and store in the refrigerator for up to 2 weeks.

Mix-Ins and Substitutions

  • You can use quick oats or old-fashioned oats. Quick oats have a smoother, more uniform texture while the old-fashioned oats will have a chewier, more noticeable oat texture.
  • You can omit the 1/2 cup ground flaxseed or replace it with: chia seeds (just use 1/3 cup chia seeds in place of the 1/2 cup) or with 1/2 cup hemp seeds, oat bran, or wheat germ
  • Switch it up with almond butter or a seed butter in place of peanut butter. Or use a combination! I love the texture and flavor of using both almond butter and peanut butter sometimes.
  • If you use a natural peanut butter, look for one that is easily spreadable but not overly oily or dry. A smooth texture is best for mixing everything together.
  • You can use maple syrup or agave instead of the honey. Both would be a 1:1 substitute in this no-bake recipe.
  • Alternate Mix-ins: Instead of 1/2 cup dark chocolate chips, you can stir in up to 1/2 cup of your desired mix-ins to flavor the bites to your liking:
    • Sweets: chocolate chips, white chocolate chips, peanut butter chips, mini M&M’s
    • Dried fruits: dried cranberries, coconut flakes, dried blueberries or raisins
    • Nuts: chopped peanuts, slivered almond or pecan bits
    • Seeds: sunflower seeds, pumpkin seeds or sesame seeds
  • You could also add in 1 teaspoon of ground cinnamon or pumpkin pie spice as a seasonal flavor booster.

Storage and Freezing

Store energy bites in a sealed container, with parchment paper between each layer, in the refrigerator for up to 2 weeks.

To freeze the bites, place in a single layer on a parchment-lined baking sheet in the freezer for 1 hour to flash freeze and then transfer to a freezer-safe plastic bag or container to store in the freezer for up to 3 months.

When ready to enjoy, let set at room temperature for 20-30 minutes or defrost in the refrigerator overnight.
