Pretty pink Paloma Jello Shots combine the classic flavor of a Paloma cocktail with the fun and whimsy of a jello shot. Pink grapefruit juice, sparkling grapefruit soda, the sweetness of agave with the kick of tequila and the salty spice of a Tajín rim. All in a cute, wobbly jello shot that’s as fun as it is tasty!

I never took a single jello shot in college, so now I’m fully embracing my party girl era! These deliciously fun and boozy jello shots make the ultimate party hack that’s sure bring your party to life. They may be tiny, but they pack a punch! My Paloma jello shots are so bright and cheerful and so deliciously citrusy. Your guests will be clamoring for more! If you haven’t tried my Mimosa Jello Shots or my Espresso Martini Jello Shots this is your cue to give them a whirl for your next grown-up gathering! So much boozy fun in a tasty bite that goes down easy.

Ingredients and Supplies

(see recipe card at the bottom of this post for measurements and details)

  • Unflavored gelatin: gives the shots their firm, jiggly texture and helps them hold their shape.
  • Cold water: blooms the gelatin so it dissolves smoothly and sets properly.
  • Pink/red grapefruit juice: brings the fresh, tart citrus flavor that’s signature to a Paloma. Fresh-squeezed or store-bought grapefruit juice both work well.
  • Sparkling pink grapefruit soda (such as Fever-Tree): boosts the grapefruit flavor and adds some fun bubbles to the shot.
  • Blanco tequila: gives the shots their classic Paloma kick and smooth tequila flavor.
  • Fresh lime: adds bright acidity that balances the sweetness of the grapefruit and agave. Also used for wetting the rim of the shot cups so the Tajín will stick.
  • Light agave nectar: sweetens the shots while complementing the tequila and tart citrus flavors. Substitute with simple syrup if you don’t have agave or if you don’t like the flavor.
  • Tajín seasoning (for garnishing the rim): adds a tangy, salty, slightly spicy finish to each shot.
  • Small pink/red grapefruit wedges (for garnishing): add a fresh, colorful garnish that hints at the grapefruit flavor inside.

How to Make Paloma Jello Shots

  • Pour the cold water into a medium saucepan and sprinkle the gelatin evenly over the top. Let stand for 5 minutes to bloom.
  • Heat over low heat, whisking constantly, until the gelatin is completely dissolved, about 2 minutes. Do not boil.
  • Remove from the heat.
Steps to make Paloma jello shots.
  • Whisk in the grapefruit juice, grapefruit soda, tequila, lime juice, and agave.
  • Divide evenly among 12 (2-ounce) plastic cups, filling each almost full.
  • Refrigerate for at least 2 hours, or until completely set.

  • Just before serving, run a lime wedge around half of the rim of each cup and dip that half in Tajín.
  • Garnish each shot with a tiny pink/red grapefruit wedge.

Storage

These Paloma jello shots are the perfect make-ahead party treat. You can prepare them in advance, cover with lids or plastic wrap, and refrigerate until you’re ready to serve. For the freshest presentation, wait to garnish each shot with the Tajín rim and grapefruit wedges until just before serving.

Store any leftovers covered in the refrigerator for up to 3 days. I don’t recommend freezing them, as gelatin can lose its smooth texture and become watery once thawed.
