Nothing brings more zip to a boozy brunch than fun and fabulous Mimosa Jello Shots! Made with fresh orange juice, gelatin, prosecco or champagne, orange liqueur and simple syrup, they come together so quick, and down the hatch even quicker! Top with sparkling sugar and a mini orange wedge to mimic the classic cocktail. They’re always a hit and sure to elevate your entertaining!

For the Young at Heart

If you’re looking for a party hack that really brings the party to life, the boozy jello shot is it. They may be tiny, but they pack a punch! These mimosa jello shots are refreshing and fun and so, so tasty. And if you haven’t tried my Espresso Martini Jello Shots, this is your cue to give them a whirl for your next grown up gathering! They’re everything an espresso martini should be—a little creamy, a little boozy, with bold coffee flavor, all in a tasty bite that goes down easy.

Ingredients and Supplies

Ingredients:

  • Unflavored gelatin: gives the shots their firm, jiggly texture so they set up and hold their shape.
  • Orange juice: provides the fresh, citrusy mimosa flavor and gives the gelatin the liquid it needs to bloom and dissolve. Fresh-squeezed or store-bought orange juice both work well, or substitute another juice such as grapefruit, pineapple, or cranberry for a different flavor.
  • Prosecco or Champagne: adds the signature bubbly wine flavor that turns these from orange Jell-O shots into mimosa-inspired ones. You can use any dry sparkling wine, such as Cava, in its place.
  • Orange liquor (such as Cointreau or triple sec): boosts the orange flavor while adding a little extra boozy sweetness. Grand Marnier can be substituted for a slightly richer orange flavor.
  • Simple syrup: adds just enough sweetness to balance the citrus and alcohol. You can leave it out for a less-sweet shot or adjust the amount to taste.
  • White sparkling sugar, for garnishing
  • Orange wedges, for garnishing

How to Make Mimosa Jello Shots

  • Pour 1/2 cup cold orange juice into a medium saucepan and sprinkle the gelatin evenly over the top. Let stand for 5 minutes to bloom.
  • Heat over low heat, whisking constantly, until the gelatin is completely dissolved, about 2 minutes. Do not boil.
  • Remove from the heat and whisk in the remaining 3/4 cup orange juice.
  • Let cool for about 5 minutes, then gently stir in the prosecco or champagne, orange liqueur, and simple syrup.
  • Divide among 12 (2-ounce) plastic cups, filling each almost full.
Steps to make mimosa jello shots.
  • Refrigerate for at least 2 hours, or until completely set.
  • Just before serving, lightly sprinkle the top of each jello shot with white sparkling sugar to mimic the bubbly sparkle of champagne. Garnish with a tiny orange wedge on the rim and serve chilled.

Storage

These jello shots are the perfect make-ahead party treat. You can prepare them in advance, cover the cups with lids or plastic wrap, and refrigerate until you’re ready to serve. For the freshest presentation, wait to garnish each shot with the sugar and orange wedges until just before serving.

Store any leftovers covered in the refrigerator for up to 3 days. I don’t recommend freezing them, as gelatin can lose its smooth texture and become watery once thawed.
