Description

These easy Mimosa Jello Shots combine fresh orange juice, Prosecco or Champagne, and orange liqueur for a fun, boozy treat that’s perfect for brunch!


Ingredients

  • 2 (.25-ounce) envelopes unflavored gelatin
  • 1 and 1/4 cups orange juice, divided
  • 3/4 cup Prosecco or Champagne
  • 2 tablespoons orange liqueur (such as Cointreau or triple sec)
  • 2 tablespoons simple syrup

Instructions

  1. Pour 1/2 cup cold orange juice into a medium saucepan and sprinkle the gelatin evenly over the top. Let stand for 5 minutes to bloom.
  2. Heat over low heat, whisking constantly, until the gelatin is completely dissolved, about 2 minutes. Do not boil.
  3. Remove from the heat and whisk in the remaining 3/4 cup orange juice.
  4. Let cool for about 5 minutes, then gently stir in the prosecco or champagne, orange liqueur, and simple syrup.
  5. Divide among 12 (2-ounce) plastic cups, filling each almost full.
  6. Refrigerate for at least 2 hours, or until completely set.
  7. Just before serving, lightly sprinkle the top of each jello shot with white sparkling sugar to mimic the bubbly sparkle of Champagne. Garnish with a tiny orange wedge on the rim and serve chilled.
