Description

Tart and tangy with a subtly sweet finish and a salty, spicy Tajín rim, these cheerfully colored Paloma Jello Shots bring the zing! to your cocktail party.


Ingredients

  • 2 (.25-ounce) envelopes unflavored gelatin
  • 1/2 cup cold water
  • 1/2 cup fresh pink/red grapefruit juice
  • 1/2 cup sparkling pink grapefruit soda (such as Fever-Tree)
  • 1/2 cup blanco tequila
  • 1/4 cup fresh lime juice
  • 1/4 cup light agave nectar

For Serving

  • Tajín, for rimming
  • Small pink/red grapefruit wedges, for garnishing

Instructions

  1. Pour the cold water into a medium saucepan and sprinkle the gelatin evenly over the top. Let stand for 5 minutes to bloom.
  2. Heat over low heat, whisking constantly, until the gelatin is completely dissolved, about 2 minutes. Do not boil.
  3. Remove from the heat and whisk in the grapefruit juice, grapefruit soda, tequila, lime juice, and agave.
  4. Divide evenly among 12 (2-ounce) plastic cups, filling each almost full.
  5. Refrigerate for at least 2 hours, or until completely set.
  6. Just before serving, run a lime wedge around half of the rim of each cup and dip that half in Tajín.
  7. Garnish each shot with a tiny pink grapefruit wedge.
