The key ingredient to make these no-bake treats hold their shape and chewy texture so well is Karo® Light Corn Syrup. It adds the perfect amount of sweetness and binds the crispy rice cereal and crushed ginger cookies together beautifully. I love using Karo® Light Corn Syrup to make no-bake treats because it isn’t too sticky or overpowering in flavor. And it doesn’t make the cereal or cookies soggy so each bite is crunchy yet smooth with a sweet gingery flavor.

These no-bake gingerbread men treats are so perfect to make around the holidays with the kids. We like to assign each kid an age-appropriate task to help with so everyone can participate.

It all starts with making the sauce that binds the no-bake treats together. Karo® Light Corn Syrup provides the sweetness and moisture without crystalizing as it cooks or sets. It’s the key ingredient to the smooth, chewy texture of these gingerbread men treats and so many other great no-bake treat recipes.

The first step is bringing the butter, sugar and Karo® Light Corn Syrup to a boil over medium heat. As soon as it starts to boil, turn off the heat. Then whisk in the ginger and cinnamon which will really enhance the gingerbread flavor of the treats.

Next, pour the sauce over the crispy rice cereal and crushed ginger cookies in a large mixing bowl. I used gingerman shaped cookies, but you could use any crispy ginger-flavored cookie.

Stir everything together until the cereal and cookies are completely coated. Press the mixture evenly into a lightly greased sheet pan and let cool completely.

Once the treats are completely cooled, you can cut them into the gingerbread men shapes, using any size (or a variety of sizes) gingerbread men cookie cutter. You could also cut them into other festive holiday shapes or just into square bars. I love the versatility of this easy and yummy recipe.

Now that you have the no-bake gingerbread men treats ready, add them to a board or serving tray with a variety of festive sprinkles, candies and icings. Place the decorations and any spreadable icings in little servings bowls on the board. Include a few squeezable tubes of icing on the board so that people can make more detailed designs on their gingerbread men treat, if they wish.

Ingredients

Scale

No-Bake Gingerbread Men Treats:

  • 1/2 cup unsalted butter
  • 3/4 cup granulated sugar
  • 1 cup Karo® Light Corn Syrup
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 7 cups crispy rice cereal
  • 1 cup crushed ginger cookies

Decorating Supplies:

  • white cookie icing
  • red cookie icing
  • green cookie icing
  • festive sprinkles
  • festive chocolates
  • mini candy canes
  • cinnamon imperials
  • gumdrops candies

Instructions

  1. In small saucepan, add the butter, sugar and light corn syrup. Cook over medium heat, stirring occasionally, until mixture comes to a full boil. Turn off the heat. Whisk in the ginger and cinnamon until well combined.
  2. Meanwhile, spray a 12″ x 17″ sheet pan with non-stick cooking spray. Set aside.
  3. In a large bowl, add the crispy rice cereal and crushed ginger cookies.
  4. Pour the corn syrup mixture evenly over the cereal and crushed cookies in the bowl. Stir until the cereal and crushed cookies are completely coated. Press the mixture into the prepared pan. Let cool completely.
  5. Once the treats are completely cooled, use a gingerbread man cookie cutter to cut as many gingerbread men shapes out of the treats as possible.
  6. To build the decorating board, place the icings, sprinkles and candies in mini serving bowls on the board. Arrange the gingerbread men treats all across the board. Let each person decorate their gingerbread men as they wish. Enjoy!

Notes

Store the No-Bake Gingerbread Men Treats in an airtight container at room temperature for up to 3 days.
