Merry, Bright, and Oh-So Yummy

Y’all know me. There is nothing I love more than being together with my family around the holidays, eating yummy food and making great memories. The weather outside may be frightful, but inside? We’ve got hot drinks and some pretty chill friends!

This Hot Chocolate Board featuring Snowman Scotcheroos is the cutest, coziest holiday treat board and I am completely obsessed. It’s a delight for the whole family! Hot chocolate with salty pretzels, zippy peppermint, and oodles of sweets; there’s something everyone will enjoy. And let’s not forget those adorable snowmen.

What is a Scotcheroo?

If y’all aren’t familiar with scotcheroos, they’re a  chocolatey (in this case, white chocolate), butterscotchy treat made with crisp rice cereal and corn syrup. High quality corn syrup is made with real vanilla and salt and is the key ingredient to the chewy texture of these scotcheroos. It’s a subtle sweetener, made without high fructose corn syrup, that enhances the flavor and texture.

Suffice it to say, scotcheroos are delectable. And in this case, very, very cute. I won’t tell you what to do with your Snowman Scotcheroo, but if you wanted to give one a little dunk in your hot chocolate, you won’t be sorry. These fine fellas are not only yummy and fun to eat, they’re a breeze to make!

What Do I Need to Make a Hot Chocolate Board with Snowmen Scotcheroos?

  • Light Corn Syrup
  • Granulated sugar
  • Creamy peanut butter
  • Butterscotch morsels
  • Crispy rice cereal (like Rice Krispies)
  • White chocolate chips
  • Canola oil
  • Red licorice pull-n-peel (like Twizzlers)
  • Pretzel sticks
  • Brown colored regular-size M&Ms
  • Mini candy corn
  • Brown colored mini M&Ms
  • Chocolate caramel candies
  • Large rimmed baking sheet
  • Large mixing bowl
  • 2-inch round cookie cutter
  • 2.5-inch round cookie cutter

How to Make Snowman Scotcheroos

  • First, cook the corn syrup and sugar together in a large pan over medium heat, stirring to dissolve sugar. Bring the mixture to a boil and then remove from the heat.
  • Then stir in peanut butter and butterscotch morsels and mix well.
  • Add the cereal to a large bowl. Pour corn syrup mixture over the cereal and stir until evenly coated.
  • Pour the cereal mixture into greased 16.5 x 11.5-inch pan and pat into place.
  • Next, melt white chocolate chips and 1 tablespoon oil in a saucepan over low heat, stirring constantly. Or, melt the white chocolate chips and oil in the microwave in 30 second intervals, stirring between each interval until melted.
  • Then spread the melted white chocolate over the cereal in the pan. Once spread out evenly, allow to cool for 45 minutes, or until the white chocolate is just set.
  • To make the snowmen, use a 2-inch round cookie cutter to cut 15 circles from part of the bars. Then use a 2.5-inch round cookie cutter to cut 15 larger circles from the remaining bars in the pan.
  • Next, press a smaller circle up next to a  larger circle so they stick together to create each snowman. Repeat with remaining circles until you have 15 snowmen. If the circles won’t stick together, use a little Karo®Light Corn Syrup to help them stick.
  • To decorate each snowman, start by peeling two strands from a red licorice pull-n-peel and twist it to wrap around where the two circles meet for the scarf.
  • Break a pretzel stick in half and press each half into the sides of the bottom half of each snowman for the arms. 
  • Use a tiny amount of corn syrup to attach the regular candy-coated milk chocolate pieces for the eyes, the mini candy corn for the nose, and the mini candy-coated milk chocolate pieces for the mouth and buttons. 
  • Dip the bottom of a chocolate caramel candy in the corn syrup and then stick it to the top of the snowman for the hat. Repeat until all of the snowman scotcheroos are decorated.

And there you have it! The most charming, yummy snowmen around!

How to Build the Hot Chocolate Board

  • Start by making the Snowman Scotcheroos. Once made, set them aside to be placed on the board just before serving. Then, on a 20” round board (or any large board), arrange the mini marshmallows down the middle of the board as a bed of snow for the Snowman Scotcheroos.
  • Next, place two serving pots on either side of the board as place holders for the prepared hot chocolate and hot milk, as well as a small bowl for the whipped topping to fill just before serving the board.
  • Then fill mini jars and serving bowls with butterscotch morsels, caramel bits, candy-coated milk chocolate pieces, chocolate caramel candies, small milk chocolates, pretzel sticks, hot cocoa mix, marshmallow bits and crushed peppermint.
  • Arrange them on either side of the mini marshmallows on the board. Place the toasted vanilla marshmallows near one pot on the board and the candy cane marshmallows next to the other pot.
  • Arrange the red licorice pull-n-peel near one edge of the board. Then fill a small squeeze bottle with chocolate syrup and place it on the board.
  • Arrange the Snowman Scotcheroos on the mini marshmallow snow down the middle of the board. Fill the reserved serving bowl with whipped topping. Fill one pot with prepared hot chocolate and the other with hot milk. Garnish the board with peppermint candies, dark chocolate peppermint cocoa stirrers and snowflake-shaped marshmallow cocoa toppers.
  • Place ladles in the hot chocolate and hot milk. Set out mugs for each person to make their hot chocolate creations in.

Finally, serve! Let everyone enjoy eating the Snowman Scotcheroos as they create their own cups of hot chocolate to sip on! It’s so fun to watch everyone craft their own special hot chocolate. These Snowman Scotcheroos are chocolatey combine peanut butter, butterscotch, white chocolate and crisp rice cereal for treats that are as yummy as they are adorable.


Ingredients

Ingredients:

  • 1 ½ cups Light Corn Syrup
  • 1 cup granulated sugar
  • 1 cup creamy peanut butter
  • 1 cup butterscotch morsels
  • 8 cups crispy rice cereal
  • 4 cups white chocolate chips
  • 1 tablespoon canola oil

Decorations:

  • 4 red licorice pull-n-peel, for the scarves
  • 15 pretzel sticks, for the arms
  • 30 brown colored regular-size candy-coated milk chocolate pieces, for the eyes
  • 15 mini candy corn, for the nose
  • 105 brown colored mini candy-coated milk chocolate pieces, for the mouth and buttons (7 per snowman)
  • 15 chocolate caramel candies
  • 1/4 cup Light Corn Syrup

Instructions

  1. Cook corn syrup and sugar together in a large pan over medium heat, stirring to dissolve sugar. Bring mixture to a boil. Turn off heat. Stir in peanut butter and butterscotch morsels; mix well.

  • 2 cups mini marshmallows
  • ½ cup butterscotch morsels
  • ½ cup caramel bits
  • ½ cup brown candy-coated milk chocolate pieces
  • 15 chocolate caramel bites
  • 15 small milk chocolates
  • 25 pretzel sticks
  • ½ cup hot cocoa mix
  • ¼ cup marshmallow bits
  • ¼ cup crushed peppermint
  • 1 bag toasted vanilla marshmallows
  • 1 bag candy cane marshmallows
  • 5 red licorice pull-n-peel
  • ½ cup chocolate syrup
  • 1 cup whipped topping
  • 3 cups prepared hot chocolate
  • 3 cup hot milk
  • 15 round peppermint candies
  • 4 snowflake-shaped marshmallow cocoa toppers with crushed peppermint
  • 3 dark chocolate peppermint hot cocoa stirrers
