I love a Thanksgiving turkey. Who doesn’t? But let’s be real about how much work a turkey takes! And for your Friendsgiving feast, these Honey Herb Roasted Chicken Drumsticks are a delicious alternative that won’t have you up at all hours.

There’s no giblets to mess with. No poultry thermometer. They won’t spend hours defrosting and even more hours in the oven. And yet, these honey roasted herb drumsticks taste like you’ve made all that effort and more. Golden, crackly skin, moist, tender meat, and just the right amount of seasoning… well, let’s just hope you’ve made enough.

These drumsticks are really hard to beat. Get it? drumsticks? Beat? I’ll be here all week, folks!

What Do I Need to Make Honey Herb Roasted Drumsticks?

  • Chicken drumsticks
  • Chopped fresh oregano
  • Chopped fresh thyme
  • Chopped fresh rosemary
  • Paprika
  • Kosher salt
  • Black pepper
  • Unsalted butter, melted
  • Honey
  • Rimmed baking sheet

How to Make Honey Herb Roasted Chicken Drumsticks

  • First, preheat the oven to 450°F. Spray a rimmed baking sheet with nonstick cooking spray and set aside. Then, in a small bowl, stir together the oregano, thyme, rosemary, paprika, salt and pepper.
  • Pat the drumsticks dry with paper towels. Place on the prepared baking sheet. Brush them all over with 1/4 cup melted butter and then rub evenly with the seasoning mix. Roast uncovered for 10 minutes, until the skin is browned.
  • Meanwhile whisk together 1/4 cup melted butter and 2 tablespoons honey for the glaze. Remove the drumsticks from the oven. Turn the oven to 350°F. 
  • Brush the drumsticks with half of the glaze and return to the oven to roast for 15 minutes. Remove and brush with the remaining glaze. Let continue roasting for another 15 minutes or until an instant-read thermometer registers 165°F and juices run clear when pierced with a fork.
  • Allow to rest for 10 minutes before serving to allow the juices to redistribute and settle. Serve and enjoy!

Ingredients

Drumsticks:

  • 8 chicken drumsticks
  • 2 tablespoons chopped fresh oregano
