Flourless Chocolate Chunk Cookies

If y’all haven’t tried the Chocolate Crispy Cookies from Central Market here in Texas, well, you’re missing out. I went through a phase of eating at least one of them a day, so I finally decided to create my own recipe. And, if I do say so myself, they turned out AMAZING.

The texture from the crushed nuts and chocolate chunks of my Flourless Chocolate Chunk Cookies is as irresistible as the cookie that inspired them. Blending with the egg whites creates a batter that bakes crispy on the outside and chewy on the inside with a slight crunch from the nuts and chocolate chunks throughout.

They’re absolute cookie perfection from just five ingredients!

Five Ingredients, One Simple Method

This recipe makes easy work of delicious, can’t-eat-just-one cookies! First, in a food processor or powerful blender, blend the nuts and 1 cup of the chocolate chunks until crushed together. Next, add the egg whites, honey, and baking powder and process/blend until a thick dough forms. If the batter is too thick to blend, add one tablespoon of water at a time until able to blend easily.

Transfer the dough to a mixing bowl and stir in the remaining cup of chocolate chunks. Scoop 2-tablespoon sized portions of dough a few inches apart on the prepared cookie sheet.

Then bake for 10-12 minutes, rotating the cookie sheet halfway through. Finally, let the cookies cool on the cookie sheet for 5 minutes before transferring to a wire rack to cool completely. That part takes a bit of patience, I’ll admit. I’m always reaching for a cookie before they’re cooled, but I trust y’all to have more self control 😜.

Ingredients

  • 2 cups honey roasted nuts (could use pecans, almonds, cashews or really any nut)
  • 2 cups semi-sweet or dark chocolate chunks, divided
  • 3 egg whites
  • ¼ cup honey
  • ½ teaspoon baking powder

Instructions

  1. Preheat oven to 350°F. Line a large cookie sheet with parchment paper or spray with non-stick cooking spray and set aside.
  2. In a food processor or powerful blender, blend the nuts and 1 cup of the chocolate chunks until crushed together.
  3. Add the egg whites, honey and baking powder and process/blend until a thick dough forms. If the batter is too thick to blend, add one tablespoon of water at a time until able to blend.
  4. Transfer dough to a mixing bowl and stir in the remaining 1 cup of chocolate chunks.
