Eggs-celent Egg Salad
Once you try this Egg Salad recipe, you’re going to forget there’s any other way to make it! Expertly hard-boiled eggs, spices and fresh ingredients give this egg salad texture and flavor that’s hard to beat! It’s just so scrumptious.
Crisp red onion, fresh chives, pickle relish, come together with Dijon mustard and spices come together to make your favorite hard boiled eggs into egg salad perfection. All you need are some eggs (white, brown, pretty blue-green heritage eggs–any kind of egg will do!), a bit of salt, and some water and you’re halfway to delicious, versatile, perfectly-textured hard-boiled eggs. It doesn’t get any easier!
How to Make Egg Salad
First, chop the hard boiled eggs into large chunks. Then, in a mixing bowl, stir together the mayonnaise, Dijon mustard, relish, red onion and chives. Add the chopped eggs to the mayonnaise mixture and gently stir until well combined.
Salt and pepper to taste. Garnish with paprika to serve. So simple!

Ingredients
- 12 hard boiled eggs, chopped into large chunks
- ½ cup mayonnaise
- 2 tablespoons Dijon mustard
- 2 tablespoons relish
- ¼ cup chopped red onion
- 2 teaspoons chopped fresh chives
- Salt and pepper, to taste
- Pinch of paprika, for garnish
Instructions
- Chop the hard boiled eggs into large chunks.
- In a mixing bowl, stir together the mayonnaise, Dijon mustard, relish, red onion and chives.
