No Derby Day would be complete without Mint Juleps. And no good party would be complete without an incredible dessert. So get ready to WOW! every lady and gent at your party with these bourbon-spiked Mint Julep Brownies. Rich, fudgy brownies topped with a sweet, creamy mint frosting — they’re sure to be a winner at your Kentucky Derby party!

Chocolate Mint Magic
There’s something so refreshing about mint when the weather starts to warm up. There’s always fresh mint lemonade or a chocolate mint chip ice cream cake at our summer cookouts. Chocolate and mint is even more magical and with just a touch of bourbon, these mint julep brownies make such a decadent and refreshing treat that’s perfect for the derby or any occasion.

Ingredients and Supplies

Ingredients:
- Unsalted butter: adds richness and moisture to the brownies as well as providing richness in the frosting.
- Unsweetened chocolate squares: provides deep chocolate flavor and contributes to the brownie structure.
- Large eggs: bind ingredients together and give structure while adding moisture.
- Granulated sugar: sweetens the brownies and helps create a moist, tender crumb.
- All-purpose flour: provides structure and stability to hold the brownies together.
- Baking powder: adds lift and keeps the brownies from being too dense.
- Kosher salt: enhances the chocolate flavor and balances sweetness. Table salt will actually pack a saltier punch than Kosher salt so if you only have table salt, adjust accordingly.
- Bourbon: adds warm, oaky depth that complements the chocolate and mint so beautifully. You can omit the bourbon or use a bourbon extract or a non-alcoholic bourbon for a non-alcoholic option.
- Mint extract: provides that cool, refreshing minty flavor that you love in a classic mint julep. Peppermint extract works as a replacement, but use slightly less since it’s stronger.
- Powdered sugar: sweetens and thickens the frosting while keeping it smooth. Sift first to avoid lumps.
- Milk: adds moisture and richness to the frosting and makes it a spreadable consistency.
- Green food color: optional, but adds a visual minty-green color for presentation. You can leave it out or use natural coloring like matcha or spinach powder.
Supplies:
- 9×13-inch baking dish
- Parchment paper
- Heavy saucepan
- Whisk
- Large mixing bowls
- Electric mixer with the whisk attachment or hand mixer

How to Make Mint Julep Brownies
- Preheat oven to 350°F. Line a 9×13-inch baking dish with parchment paper and lightly spray with non-stick cooking spray. Set aside.
- In a heavy saucepan over low heat, melt butter and chocolate together, whisking until smooth. Cool slightly.
- In a large bowl, beat eggs with an electric mixer for 2 minutes.

- Gradually add sugar, beating well.
- Add the chocolate mixture and beat until well combined.
- Add in the flour, baking powder and salt.

- Beat until just combined.
- Beat in the bourbon and mint extract.
- Pour batter into prepared baking dish and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

- Cool completely in baking dish on a wire rack.
- While brownies are cooling, prepare the frosting. In a large bowl, beat the butter and powdered sugar until combined. Beat in the milk, 1 tablespoon at a time, until spreadable.

- Beat in the mint extract and green food color until of desired color.

- Spread frosting evenly over cooled brownies. Let set for at least 30 minutes.
- Lift brownies out of baking dish using the sides of the parchment paper. Cut into squares.

Storage
Store in an airtight container in the refrigerator. If stacking the brownies, place a sheet of parchment paper between layers to prevent sticking. They will stay fresh and moist in the refrigerator for up to 5 days. Enjoy chilled or let set at room temperature for 20-30 minutes to soften.
To freeze for longer storage, first chill the brownies in the refrigerator until the frosting is firm. Place slices on a baking sheet to freeze until solid, then wrap each brownie tightly in plastic wrap and store in a freezer-safe bag or container. Freeze for up to 2–3 months. Thaw overnight in the refrigerator or at room temperature for about 30–45 minutes before serving.

- 1 and 1/2 cups all-purpose flour

- 3 drops green food color
