Easy, fun, fresh and sure to make a good impression, this Baked Bean Cowboy Caviar is full of delicious flavor and texture. Canned baked beans, corn, and fresh veggies like red onion, bell peppers and tomatoes add tons of interest while garlic, fresh lime and jalapeño give it just the right amount of kick. Serve it as a dip or a side salad at a summer cookout. Either way, it’s sure to please any rough-and-tumble crowd!

You’re Gonna be Popular

If you’re a fan of Trader Joe’s Cowboy Caviar Salsa, you’re gonna want to give this recipe a try! It’s equally good as an appetizer dip or as a side salad to a meat dish (like my 3-Ingredient Slow Cooker Pulled Pork, or some Skillet Sliders). This simple dish is so easy and perfect. Texas Caviar’s Sweeter Side

While Texas Caviar is usually made with black-eyed peas and black beans, this version uses sweet and savory baked beans. I love the baked bean version of this dip because baked beans are such a “cowboy” bean and they add great flavor and texture. They’re usually sweetened with brown sugar so they add such a nice balance.

Ingredients:

  • Canned baked beans, undrained
  • Red bell pepper
  • Green bell pepper
  • Canned sweet kernel corn, drained
  • Red onion
  • Roma tomatoes
  • Large jalapeno
  • Minced garlic
  • Fresh lime juice
  • Fresh cilantro
  • Salt and black pepper, to taste

How to Make Baked Bean Cowboy Caviar

  • In a large mixing bowl, stir together the baked beans, red bell pepper, green bell pepper, corn, red onion, tomatoes, jalapeno, and garlic.
  • Add the lime juice and cilantro, gently tossing to combine well. 
  • Salt and pepper to taste

  • Keep refrigerated. Stir well before serving. Serve with chips for dipping.

Storage

Store leftover dip in an airtight container in the refrigerator for up to three days. Stir well before serving.

  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1/2 cup sweet kernel corn, drained
  • 1/2 cup diced red onion
  • 1/2 cup diced Roma tomatoes
  • 1 large jalapeno, diced (with or without seeds)
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice
  • 1/2 cup chopped fresh cilantro
  • Salt and black pepper, to taste
