Easy, No-Fuss Overnight Oats
One of my best friends from high school, who just had her 3rd child, reached out to me recently with a challenge to turn her favorite make-ahead breakfast, overnight oats, into a breakfast bar that she could take on the road as they rush out the door in the mornings to get to school on time. My kind of challenge! And one that my family could benefit from too.
I wanted to keep the recipe super quick and simple so it could be made in a matter of minutes at the end of an exhausting day with ingredients that most of us more than likely already have on hand.
These bars are so easy and ready to go the next morning as you rush out the door. No baking required. Perfect for on-the-go enjoyment!
What Do I Need to Make Overnight Oats Bars?

- Old-fashioned rolled oats
- Flax seeds or chia seeds
- Ground cinnamon
- Pure vanilla extract
- Honey
- Milk
- Ripe bananas
- Slivered or chopped nuts (slivered almonds, pecan pieces, chopped walnuts, pistachios, etc.)
- 1 cup fresh fruit (small blueberries, chopped strawberries, raspberries, etc.)
- 8×8 baking dish
- Parchment Paper
- Plastic wrap

How to Make Overnight Oats Bars
- In a large bowl, stir together the oats, flax seeds, and cinnamon.
- Add the vanilla, honey and milk and stir until well combined.
- Gently stir in the mashed banana.
- Add 1/4 cup nuts and 1 cup fresh fruit.
- Spread the mixture evenly into a parchment-lined 8×8-inch baking dish.
- Top with more nuts and fruits, if desired.
- Cover with plastic wrap and place in the refrigerator overnight or at least 8 hours.
- In the morning, lift the bars from the pan using the sides of the parchment paper. Cut into bars.
How to Store Overnight Oats Bars
Store overnight oats bars in an airtight container in the refrigerator for up to 5 days.

Would this recipe work with chopped apples? Or would the apples turn brown?
Hi, Joyce! You could definitely stir chopped apples into the bars, but yes, I would think they’d brown and wilt and not look too appetizing if you placed them on top. Hope this helps. Enjoy!

I just made your bars and the flavor is great but they are completely falling apart. What could I have done wrong?
Hi Sue! Did you follow all of the ingredients exactly? Did you use ripe bananas? If the bananas were firm, they wouldn’t have enough moisture when mashed to hold the bars together. And did you use an 8×8-inch pan? If the bars are too thin, they will more likely break apart. That’s all that I can think of. Hope this helps and that you get to try them again soon. Enjoy!
