The easiest, most deliciously healthy pasta salad you will ever make and that everyone will love!
This pasta dish happened by accident one night when we were craving mac & cheese and didn’t have any cheese on hand. Oops! I already had the pasta boiling, so I opened the fridge in search of something other than just butter to save dinner and still be delicious. A big tub of garlic hummus (which we love!) caught my eye so I started scooping spoonfuls of it into the warm cooked pasta. As I was stirring it in and it was melting to coat the pasta, I knew I was creating something great!
The hummus coats the pasta so well, making it light and creamy and oh so flavorful. I had some chicken, cucumber, tomatoes and feta already on hand, so I just tossed those in for a tasty Greek twist and in just 20 minutes, we were devouring a winner of a dinner! Delicious!
Just six simple ingredients and just 20 minutes is all it takes to make this great meal that you can enjoy for dinner or make ahead to keep in the fridge for lunches throughout the week. It’s light, healthy, fresh and fabulous!
I’ve already made it 3 times since first creating it since we just can’t get enough. Too easy and too healthy not to make over and over again! Yummy yum!
- 1 pound uncooked whole wheat pasta
- 1 cup garlic-flavored hummus
- 1 cup chopped cooked chicken
- ½ cup halved cherry tomatoes
- ½ cup chopped cucumber
- ½ cup feta cheese
- salt & pepper to taste
- Cook pasta according to package directions. Drain and return to hot pan.
- Stir in hummus until pasta is well coated. Gently stir in remaining ingredients. Salt and pepper to taste. Serve warm or cold.
