Here’s to Happy Accidents!

This pasta dish happened by accident one night when we were craving mac & cheese and didn’t have any cheese on hand. Oops! I already had the pasta boiling, so I opened the fridge in search of something to save dinner and still be delicious. A big tub of garlic hummus (which we love!) caught my eye so I started scooping spoonfuls into the warm cooked pasta. As I was stirring it in and it was melting to coat the pasta, I knew I was creating something great!

The hummus coats the pasta so well, making it light and creamy and oh so flavorful. I had some chicken, cucumber, tomatoes and feta already on hand, so I just tossed those in for a tasty Greek twist and in just 20 minutes, we were devouring a winner of a dinner! Delicious!

What Do I Need to Make Hummus Pasta Salad?

  • Whole wheat pasta
  • Garlic-flavored hummus
  • Chopped cooked chicken
  • Cherry tomatoes
  • Cucumber
  • Feta cheese
  • salt & pepper to taste

How to Make Hummus Pasta Salad

  • Cook pasta according to package directions. Drain and return to hot pan.
  • Stir in hummus until pasta is well coated.
  • Gently stir in remaining ingredients. Salt and pepper to taste.

  • Serve warm or cold.
  • Store pasta salad in an airtight container in the refrigerator for up to five days.

  • 1 cup garlic-flavored hummus
  • 1 cup chopped cooked chicken
  • 1/2 cup halved cherry tomatoes
  • 1/2 cup chopped cucumber

  • salt & pepper to taste

Instructions

    1. Hi Norma! It certainly depends on which hummus you use. The creamier the hummus, the creamier the pasta. I would recommend adding olive oil until of desired creaminess. Hope this helps and that you get to try it again soon!
