Isn’t it glorious? Creating this Eat the Rainbow Snack Board made me so happy! When I stepped back to look at the finished product, I was immediately taken back to grade school art class and the color wheel. Do y’all remember Roy G Biv? So fun! The brilliant kaleidoscope of colors delights the senses! And the food? So, so tasty.

The only thing better than how gorgeous it turned out is how easy it is to put together. And I’ll let you in on a little secret. Kids–even the pickiest of picky eaters–cannot help themselves around a fun food board. Just watch them try something new (but pretend not to notice or you’ll ruin it!).

Getting Fresh!

Y’all know I love to wander the grocery store. I can literally hang out there for hours exploring new foods and old favorites. Tom Thumb is like my second home.  You can find all of the ingredients on this colorful board at your local Albertsons Companies store. If y’all don’t have a Tom Thumb, you probably have another Albertsons Companies store nearby (Albertsons, Safeway, ACME Markets, Jewel-Osco, Randalls, Pavilions, Shaw’s, Star Market, United Supermarkets or Vons). They’re everywhere and they’re consistently great. And their reward program, just for U®, makes deal-hunting that much more satisfying. I’m at Tom Thumb almost daily and I love the discounts on groceries and gas!

Every day ingredients (you probably already buy many of these!) that don’t cost a fortune, either. I put together a handy shopping list in the recipe card to make it even easier. What Do I Need to Build a Rainbow Snack Board?

How to Build the Eat the Rainbow Snack Board

First, wash and prep the fruits and vegetables. When prepping, divide the peppers, carrots, and tomatoes by color. Trim the stems off the baby broccoli, slice the cucumbers, and half the strawberries lengthwise.

Using a 20” round board, start by arranging small serving bowls of vanilla yogurt, red pepper hummus, pimento cheese, guacamole, and spinach dip on the board. You will use the remaining ingredients to create the rainbow effect, so place accordingly.

Next place the Wensleydale cranberry cheese and Kaukauna Rose white cheddar cheese on the far right of the board, as they are colored for the violet hue of the rainbow.

Now to fill in each hue of the rainbow!

Red: With the red sweet mini peppers, beet crackers, raspberries and strawberry halves, create a red hued section.

Orange: Take the cheddar cracker cuts, orange sweet mini peppers, dried apricots, sweet potato crackers, mandarin oranges, and orange baby carrots and arrange them in a stripe next to the reds.

Yellow: Place the cashews, everything crackers, yellow tomatoes, yellow carrots, and yellow sweet mini peppers next to the orange stripe.

Green: Take the sugar snap peas, dried kiwi slices, greenish cherry tomatoes, baby broccoli and cucumber slices to create the green hued section.

Indigo and Violet: To finish, use blackberries, purple baby carrots, and blueberries. Then fill in the remaining space between the cheeses with salami nuggets and purple grapes.

The Perfect Pairing

A well-chosen wine can make good food even better. But that doesn’t mean you have to spend forever in the wine aisle fretting about what pairs best with your snack board. My first rule of wine pairing? Drink what you love. If you wouldn’t drink it alone, you shouldn’t be drinking it with your food. No wine snobs here! I also like to choose a wine with a clean finish, because it won’t get in the way of enjoying the food.

For this Eat the Rainbow Snack Board, I chose a 2017 Signature Reserve Russian River Valley® Chardonnay and Mazarini® Sparkling Rosé. Both light, crisp wines that go great with fresh fruits and veggies as well as the heavier meats and cheeses.
