Move over rocky road ice cream, there’s a new chocolate, almond, marshmallow combo treat in town that’s gonna give you a good run for your money! 😉

4-Ingredient Rocky Road Crunch Bars

Rocky road is one of my favorite ice creams and anytime I can think of a treat to make with the combo of chocolate, almonds and marshmallows, I do. So when Malt-O-Meal® asked me to a create a recipe with their yummy Coco Roos® cereal, the only road my mind went down was the rocky one. Fellow rocky road lovers, get excited!!

I already love the sweet chocolate crunch of Coco Roos, but when coated in creamy chocolate along with crunchy almonds and chewy marshmallows…oh my yum!

4-Ingredient Rocky Road Crunch Bars

Seriously, one of the easiest sweet treats you could make. Just melt chocolate candy coating (or chocolate almond bark) according to package directions before coating the Coco Roos, almonds and marshmallows in it. Once everything is coated evenly, you’ll press it into a parchment lined baking dish and garnish with crushed almonds and marshmallows, if desired. Let the bars set in a cool, dry place for about 10 minutes or longer before cutting into squares and enjoying!

These are one of my new favorite late-night snacks. Think Monday night, kids tucked in bed, The Bachelorette recorded and one (or two) of these rocky road crunch bars in hand. Perfection!

They’d also be great to gift during the holidays, take on a road trip or camp out, or serve during the big game. Guaranteed to be a huge hit no matter the occasion!

Description

Just 4 ingredients and about 15 minutes is all it takes to make these irresistible Rocky Road Crunch Bars!


Ingredients

  • 1 (16 ounce) package chocolate candy coating
  • 3 cups Malt-O-Meal® Coco Roos cereal
  • 1 cup roasted salted whole almonds (+ 1/4 cup crushed for garnishing, if desired)
  • 2 cups mini marshmallows (+ 1 cup for garnishing, if desired)

Instructions

  1. Line a 9×13-inch baking dish with parchment paper and spray with non-stick cooking spray.
  2. Place Coco Roos and 1 cup whole almonds in a large bowl. Melt chocolate candy coating according to package directions. Pour melted candy coating over cereal and almonds and toss to coat. Add marshmallows and gently toss until cereal, almonds and marshmallows are all evenly coated in candy coating.
  3. Immediately press mixture evenly into prepared dish using lightly greased parchment paper to press down on the mixture. Sprinkle with 1/4 cup crushed almonds and 1 cup mini marshmallows, if desired.
  4. Allow bars to set in a cool, dry place for about 10 minutes. Cut into squares.

Notes

If using a 20 ounce package of chocolate almond bark instead of candy coating, increase the Coco Roos to 3-1/2 cups.

We can't get enough of this One-Ingredient Banana We can't get enough of this One-Ingredient Banana Ice Cream! ๐ŸŒ๐Ÿฆ It may be 100+ degrees here in Dallas, but we're staying cool and content with this naturally sweet treat. Simply slice and freeze any extra-ripe bananas you have on hand, blend in a food processor, and enjoy all summer long! ๐Ÿค— #TheBakerMama

Ingredient:
6 very ripe bananas

Instructions:
1. Line a baking sheet with parchment paper. Slice the bananas into 1/2-inch slices and lay flat on the parchment-lined baking sheet. Place in the freezer for 1 and 1/2 hours.
2. Remove frozen bananas from the freezer and let set out for about 5 minutes while you set up your food processor or blender. You want the bananas to soften just a bit, but still be frozen.
3. Place the bananas in the food processor and pulse/blend until smooth and creamy. Serve and ENJOY!

Notes:
It has a soft serve consistency when you first make it which is so yummy. If you want a more scoopable consistency, freeze it in a freezer-safe container for at least 2 hours. It freezes well for up to 3 months. Just let it set out of the freezer for about 5 minutes to soften a bit before scooping.

Ingredients:

1 (8 ounce) wheel soft-ripened brie cheese
3 fresh peaches
1 crusty baguette
Olive oil
1/4 cup prepared pesto
2 tablespoons chopped fresh basil
Sea salt

Instructions:
1. Preheat the grill to medium heat and brush the grates with oil.
2. Slice the peaches in half and remove the pits.
3. Slice the baguette into ยผ inch thick slices.
4. Place baguette slices, peaches (cut side up) and brie wheel on a baking sheet and brush the tops of everything with olive oil.
5. Put everything on the grill with the olive oiled sides down. Brush the tops of the baguette slices and brie wheel with olive oil while the bottoms are grilling.
6. Grill until you have beautiful grill marks and then flip the brie and baguette slices.
7. Remove everything from the grill once the peaches are soft with good grill marks, the brie is melted (about 2-3 minutes per side) and the baguette slices are toasted on both sides.
8. Transfer the brie to a serving plate.
9. Dice four of the grilled peach halves. Slice the other two peach halves into thin slices.
10. Place the diced peaches on top of the grilled brie.
11. Drizzle with the pesto and garnish with the chopped fresh basil.
12. Sprinkle it with a little sea salt.
13. Serve with grilled baguette and peach slices. Enjoy!
