Easy, Decadent and Fun

My obsession with s’mores is well documented. Whether it’s classic s’mores on a do-it-yourself S’mores Tray or No-Bake S’mores Bars or an icy cold S’mores Ice Cream Cake, I am a sucker for that chocolate, graham cracker, marshmallow combo.

These s’mores cookie pies take it up a notch or two with the addition of classic chocolate chip cookie flavors. Baked up soft and sweet in the middle of a graham cracker crust, with molten marshmallows, graham cracker crumbs and a drizzle of chocolate syrup — they’re incredibly decadent and such a fun twist on that classic s’mores yumminess.

Kid-Friendly!

This is the perfect dessert to get the kids involved in the kitchen. They can assemble their own with very little supervision and just leave the actual baking to the adults. The recipe makes six mini pies, so it’s the perfect activity for sleepovers, birthday parties, or even family movie night. It’s such a yummy, cozy treat with crowd appeal.

Step into the kitchen with me to make these decadently delicious Mini S’mores Cookie Pies.

How to Make Mini S’mores Cookie Pies

  • Preheat the oven to 350°F.
  • Place the mini pies on a rimmed baking sheet. Fill each mini pie crust with about 3 tablespoons of chocolate chip cookie dough, pressing the cookie dough evenly into the crust.
  • Bake the pies on the center rack of the oven for 15-18 minutes, or until the cookie dough is set and beginning to turn a light golden brown.
  • Remove from the oven and top each pie with about 12 mini marshmallows.

  • Return the pies to the oven, placing them on the top rack this time. Bake for an additional 3-5 minutes, or until the marshmallows are puffed and lightly toasted. If you want the marshmallows more charred on top, you can broil them for a few minutes, but watch closely to prevent burning.

  • Remove from the oven and let set for about 5 minutes before sprinkling each pie with graham cracker crumbs.

Storage

They’re best enjoyed warm from the oven, but leftovers can be stored wrapped tightly in plastic wrap at room temperature for a few days or in the refrigerator for up to 4 days.

To reheat, place on a baking sheet in a 300°F oven until warmed through and the marshmallow is soft, about 5-7 minutes.

  • 6 Keebler mini graham cracker pie crusts
  • 1 and 1/4 cups chocolate chip cookie dough (store-bought or homemade)
  • 1 and 1/2 cups mini marshmallows
  • 2 tablespoons graham cracker crumbs, for garnishing
  • Chocolate syrup, for drizzling
