Cool Fun Under the Hot Sun

We usually head to Oklahoma for Memorial Day and the 4th of July to celebrate with family and friends. It’s always filled with great food, fun and fireworks!

And it’s usually very hot in Oklahoma over these patriotic holidays, so we like to have lots of fresh fruit and cool treats on hand to beat the heat with. The kids love popsicles! They’d eat them all day if we’d let them, so I decided we’d start making our own and, of course, I had to make them festive!

Tip! Make the Night Before

Little do they know these pops are made with pure fruit and they LOVE them! Strawberries for the red, bananas for the white and blueberries for the blue. So fun and yummy yum!

If you’ve never made your own pops, you should! They’re so easy. For these pops, I just layered blended strawberries, bananas and blueberries in these star shaped popsicle molds (freezing for about 45 minutes between each layer) and then freeze for at least 4 hours or until firm. Then you just run them under warm water to release the star-shaped mold and tada! Perfect red, white and blue pops…

If you don’t want to buy a special mold, you can always use small paper cups and popsicle sticks! They still make great pops the kid will love! They’re super healthy and so refreshing that I’m planning to keep our freezer stocked with them all summer. Such a great poolside treat!
