A Sweet, Simple Summer Spread

For a dessert spread that’s as beautiful as it is delicious, my Summer Shortcake Board shows off the season’s best. With fresh seasonal fruits, buttery scones, and creamy, dreamy toppings your guests can create their idea shortcake. It’s sure to be a hit at your summer gatherings!

Easy and Impressive

Isn’t this board just so gorgeous? I love all the bright colors from the fresh summer berries, cherries, peaches and garnishes. And you wouldn’t believe how easy it is to put together. You can make homemade scones (my sweet and simple scone recipe would be perfect!) or use store-bought for even more ease.

Strawberry shortcakes are a classic and a summertime staple at our house. Fresh strawberries with their sweet juices topping a lightly sweetened tender biscuit with fresh whipped cream. YUM. Well, what if we switched things up a bit and included some of our other favorite summer fruits? This Summer Shortcake Board is the best of summertime. I’m so excited to share it with you!

Serving Tips

  • This board is best enjoyed within 1–2 hours of assembling.
  • If serving outdoors in warm weather, keep it shaded and chilled as much as possible since the whipped cream and yogurt can soften quickly.
  • For longer gatherings, replenish the whipped topping, yogurt, fruit, and scones as needed instead of setting everything out at once.
  • Wait to garnish with fresh mint until just before serving so it stays vibrant and fresh.

Ingredients and Supplies

Ingredients:

  • Whipped cream: adds a light, creamy layer that makes every shortcake feel extra dreamy and indulgent. Make your own homemade whipped cream or use store-bought whipped topping (such as Cool Whip).
  • Raspberry preserves: bring a sweet burst of berry flavor that pairs perfectly with the fresh summer fruit. Feel free to swap it out for your favorite fruit preserves.
  • Honey: adds a drizzle of natural sweetness that guests can spoon over the top of their shortcakes.
  • Lemon cream yogurt: gives the board a bright, tangy twist that balances all the sweet flavors beautifully.
  • Sliced almonds: add the perfect little crunch for extra texture in every bite.
  • Mini scones: serve as the tender, buttery base for building delicious personalized shortcakes. Make homemade scones or buy from the store. They’ll be delicious either way!
  • Large peach: add a sweet, juicy alternative to traditional strawberry shortcakes.
  • Blackberries: bring a bold, juicy flavor that tastes delicious layered with whipped cream and honey.
  • Cherries: add a sweet, juicy summertime bite that’s perfect for snacking on alongside the shortcakes.
  • Strawberries: add classic shortcake flavor and beautiful bright color to the board.
  • Blueberries: add a sweet pop of flavor and make the board feel extra vibrant and abundant.
  • Lemon slices (for garnish): add a fresh citrusy touch that brightens up the entire presentation.
  • Fresh mint (for garnish): adds a cool, refreshing garnish that makes the whole board look and feel extra fresh for summer.

How to Make a Summer Shortcake Board

  • First, place a bowl of whipped cream in the center of a large (about 15×10-inch) serving platter or board.
  • Add the raspberry preserves and honey to the upper right area of the board in mini bowls/jars.
  • Place the lemon cream yogurt in small bowl in the lower right section of the board and add a mini bowl of the sliced almonds just to the left of the whipped cream.
  • Arrange the scones in three sections around the board, creating space between each grouping for the fruit.
  • Next, fill in the board with the fresh fruit: peaches, blackberries, cherries, strawberries, and blueberries.
Steps to make a summer shortcake board.
  • Finish the board with lemon slices and fresh mint tucked throughout for a bright, fresh garnish.

Tips to Prep in Advance

  • Homemade or store-bought scones both work beautifully for this board. If making homemade scones, bake them up to 1 day ahead and store in an airtight container at room temperature.
  • Wash and dry all fruit up to 1 day in advance. Store in airtight containers in the refrigerator.
  • Slice the strawberries and peaches shortly before assembling for the freshest appearance.
  • Portion the whipped cream, preserves, and yogurt into serving bowls ahead of time and refrigerate until ready to build the board.
  • The board can be fully assembled without the scones up to a few hours in advance. Cover tightly and refrigerate until ready to add the scones and serve.
